High-Protein Tuna Apple Lettuce Boats
Fresh, crunchy, and packed with protein! These lettuce boats combine savory tuna with sweet apples for a perfectly balanced, guilt-free bite.
Ingredients:
2 cans tuna in water, drained
1 crisp apple, finely diced
1/4 cup plain So Delicious yogurt
1 tbsp Dijon mustard
1 tbsp lemon juice
1 celery stalk, finely chopped
2 tbsp red onion, finely diced
Salt and pepper to taste
8โ10 large lettuce leaves (romaine or butter lettuce)
Instructions:
Drain the tuna thoroughly and place it in a mixing bowl. Add diced apple, celery, and red onion to the bowl.
In a small bowl, mix plain So Delicious yogurt, Dijon mustard, lemon juice, salt, and pepper until smooth.
Pour the dressing over the tuna mixture and gently stir until well combined. Wash and dry lettuce leaves, keeping them whole for easy filling. Spoon the tuna mixture evenly into each lettuce leaf.
Serve immediately or chill for 10 minutes for a refreshing, crisp bite.
