Simple meals are the best meals. And this one happens to pack plenty of protein, too.

Slice a block of tempeh in half, toast it up, and use it as the “bread” for an open-faced sandwich.

You can pile on whatever you like, but I went with our Chunky Chipotle Chili and a few slices of avocado. Simple, hearty, and delicious.

At 91 years old, Ann Esselstyn is and will always be our longevity icon.

Glow Challenge lunch.

Sweet potatoes and kale are loaded with carotenoids, including beta-carotene, lutein and zeaxanthin. And the avocado isn’t just there because it tastes good. Carotenoids are fat-soluble, so eating them with healthy fats can help your body absorb more of them.
