2026, the year Blizzy was brave enough to go on the boat 🥹 “Man, this is what I’ve been missing all these years?!”

As soon as he saw Cashew jump in, he jumped right in! It makes my heart so happy to see how far he’s come after living under our guest bed for the first 3 months we had him.

- Chicken salad melt - chicken salad with melted cheese on toasted bread, it makes the perfect quick & tasty lunch with 40 grams of protein!⁠

- Spring roll noodle salad - crunchy veggies, seasoned chicken, fresh herbs, rice noodles, and a sweet and tangy dressing to bring it all together, and 2 cups has 32 grams of protein!⁠

- Copycat sweet green harvest bowl - my version of one of their best bowls, but much cheaper and with 37 grams of protein.⁠

- Apple chicken salad - fall-inspired chicken salad with apples, walnuts, celery, dates, and herbs, tossed with creamy greek yogurt, with one cup packing 29 grams of protein.⁠

- Peanut butter & jelly protein smoothie - nothing easier than a smoothie for lunch, and this tastes like childhood with 38 grams of protein (and 15 grams of fiber!)⁠

- Chopped chicken salad wrap - chicken, veggies, and goat cheese wrapped into a tortilla. Ready in 20 minutes with 40 grams of protein⁠.

Mediterranean lentil salad! A hearty spin on a classic salad, it combines tender lentils, seasoned chicken, crisp veggies, olives, feta, and tons of fresh herbs, and is then tossed with a quick greek vinaigrette. Full of flavor, packed with protein and fiber, and makes a perfect lunch or option for meal prep.⁠

Who is not ready to give up summer produce quite yet!? I whipped up this dinner the other night and it was so delicious. Plus, it made a balanced meal. If we are not making a recipe (which a decent amount of the time!), we always aim for protein, carbs, fat, and veggies/fruit (which bring fiber) and spices, sauces, and dressings to keep it interesting. Keeps it easy and fuels us to feel our best!⁠

For the salad, I toasted some Israeli cous cous in olive oil and then cooked it with a little butter. Then I added diced peaches, cucumbers, chopped spinach and arugula, goat cheese, and basil, and tossed it with olive oil, balsamic glaze, salt, and pepper. Will definitely be making it again.⁠

Then I just sautéed some green beans in olive oil, salt, and pepper and sliced up some fresh tomatoes.⁠

Street corn salad! If you are summer corn obsessed like my family, this is one of my favorite ways to enjoy it. It combines sweet grilled corn, salty cotija cheese, earthy cilantro, and spicy jalapeños, mixed with a tangy, smoky, creamy dressing to bring it all together. The dressing is a mix of greek yogurt and mayo for the perfect balance. Make it for an easy side dish, bring it to a summer BBQ, or I love it as a dip with chips!

Reese’s ice cream cake! What more do I need to say?! It combines vanilla ice cream with chunks of Reese’s peanut butter cups, swirled with peanut butter, in a no-bake graham cracker crust. Make it for an easy dessert everyone will love!⁠
