Need a Mother’s Day gift idea? ❤️ 💐

Xander wanted to help me make dinner the other night. Lemon Roasted Chicken in my favorite Enameled Cast Iron Dutch Oven - something I gifted myself pre-Mother’s Day, but I am thinking of buying another for my mom!

I have had a Misen Dutch Oven for years and use it so often, I wanted a second color - isn’t this sage color gorgeous?! I use it for all my roasted meats because the heavy lid seals in all the moisture, meaning it’s fairly difficult to dry out your chicken.

🍪 Cookie Dough Bark 🍪

This no-bake treat is so simple to make, you’ll wonder why you’ve ever wasted time baking!

I love using sunflower seed butter to add flavor and nutrition to baked goods. It not only helps make this “cookie dough” chewy and delicious, it adds magnesium, selenium, and Vitamin E.

Adding a little protein powder and using almond flour helps keep this blood sugar friendly! You can even use sugar free chocolate chips to lower the sugar/carbs even more.

🥗 Meal prep this salad for a delicious whole-foods, low-carb side dish to enjoy all week long.

Keeping large salads or vegetable dishes prepped and ready to go all week helps me meet my nutrition goals. Who wouldn’t love having this salad ready to go?

I top the salad with seared tuna, marinated chicken breasts, or simple sauteed shrimp. And I don’t get tired of it - and it stays crisp for 3-4 days!

The dressing is what makes it! Sunflower Seed Butter has been a pantry staple of mine since I discovered it over a decade ago. I love that the ingredients are simple and clean - sunflower seeds and salt, that’s it.

Making my salad dressings at home also ensures I am getting just the things I want, and not a laundry list of additives and preservatives. Seriously - check the ingredient list of your favorite store-bought dressing and decide if it should stay or go! I’ve gotten rid of all of the ones I used to buy and rely on homemade options instead.

April is your reminder to slow down 🤍

In honor of Stress Awareness Month, I’ve been adjusting my morning routine.

Instead of reaching for coffee first thing, I’ve been swapping in matcha for a more steady, grounded kind of energy.

🐾 Forest literally drinks this BEFORE eating his food! 🐾
