Sharing another tip that yโ€™all might find helpful. This bag of croutons is 1 point for 1 tablespoon, which isnโ€™t much as is. However, I learned that if I crush the croutons in my food processor and put them back in the bag, then scooping out 1 tablespoon for salads still gives me crunch and I can get a lot more this way! Well worth the 1 point (or 2 points for 2 Tbsp)!

I came up with something possibly brilliant! Wonโ€™t know until tomorrow Iโ€™m soaking my dry chickpeas in pickle juice over night instead of water and then tomorrow Iโ€™ll air fry them. Iโ€™m hoping for a new flavor but no clue if it will work

Strawberry Peanut Butter Cloud
Sugar free reddi whip
Strawberries
Sugar free chocolate chips
Peanut butter( warmed) 1-2tbps depends on how much or how little you like
Spray reddi whip in a small bowl
I sliced about 4 Strawberries and added those
Then drizzle with peanut butter
Sprinkle with a handful of sugar free chocolate chips
Perfect for that sweet tooth!!

Garlic Butter Salmon with Roasted Potatoes, Glazed Carrots & Steamed Broccoli.

A flavorful, well-balanced dinner with tender garlic butter salmon, crispy golden potatoes, sweet glazed carrots, and fresh steamed broccoli simple yet satisfying.

๐ˆ๐ง๐ ๐ซ๐ž๐๐ข๐ž๐ง๐ญ๐ฌ:
For the salmon:
1 salmon fillet
1 tbsp butter
1 garlic clove, smashed
ยฝ tsp paprika
Salt & pepper to taste
For the potatoes:
2 medium potatoes, peeled & diced
1 tbsp olive oil
ยฝ tsp garlic powder
Salt & pepper to taste
For the carrots:
1 cup baby carrots
1 tbsp butter
1 tsp honey or maple syrup
Pinch of chili flakes (optional)
For the broccoli:
1 cup broccoli florets
Pinch of salt

๐ƒ๐ข๐ซ๐ž๐œ๐ญ๐ข๐จ๐ง๐ฌ:
Roast the Potatoes
Preheat oven to 400ยฐF (200ยฐC). Toss potatoes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25โ€“30 minutes until golden and crispy.
Cook the Salmon
In a skillet over medium heat, melt butter and add smashed garlic. Season salmon with paprika, salt, and pepper, then cook skin-side down for 4โ€“5 minutes per side until cooked through.
Glaze the Carrots
Steam baby carrots for 5 minutes until just tender. In a small pan, melt butter and stir in honey (and chili flakes if using). Toss carrots in the glaze for 1โ€“2 minutes.
Steam the Broccoli
Steam broccoli florets for 3โ€“4 minutes until bright green and tender-crisp. Sprinkle lightly with salt.
Assemble the Plate
Arrange salmon, potatoes, glazed carrots, and broccoli on a plate. Serve hot and enjoy.
Prep Time: 10 minutes
Cooking Time: 30 minutes
Total Time: 40 minutes
Kcal: ~520 kcal per serving
