In a sourdough mood this winter. 🍞
Almost all of these are from the same recipe:
100 g starter
400 g water
650–700 g flour if high gluten, 800 if regular flour
50 g honey
40 g avocado oil
20 g salt
Make sure the starter is in contact with the flour for a total of 24+ hours across all the rises. A couple stretch and folds or a couple turns in the kitchen aid across this time. Make sure it fully doubles (when in doubt add another hour or two) Before baking.
Makes 2 loaves 400*f for 40 min or rolls for 20+/-
min.
