My morning routine, before my day gets crazy, is to workout. I have made it a habit, one which I truly look forward to doing every day! I love how it makes me feel. It can even turn a bad mood into a great one!

Want an easy Veggie Lasagna Recipe that is soooo good, you must try this one. You can add any vegetable you wish.

Ingredients:
9 lasagna noodles
2 cups chopped mixed vegetables (like zucchini, bell peppers, and mushrooms)
1 onion, chopped
2 cloves garlic, minced
1 (24-ounce) jar marinara sauce
1 (15-ounce) container ricotta cheese
2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Instructions:
Preheat your oven to 350°F (175°C).
Cook the lasagna noodles according to the package instructions. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.
Add the chopped vegetables to the skillet and cook until they start to soften, about 7-8 minutes. Season with salt, pepper, oregano, and basil.
Spread a thin layer of marinara sauce on the bottom of a 9x13-inch baking dish.
Place 3 lasagna noodles on top of the sauce.
Spread half of the ricotta cheese over the noodles, followed by half of the vegetable mixture and a third of the mozzarella cheese.
Repeat with another layer of noodles, ricotta, vegetables, and mozzarella.
Top with the remaining 3 lasagna noodles, marinara sauce, and the remaining mozzarella and Parmesan cheeses.
Cover the baking dish with aluminum foil and bake for 30 minutes.
Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
Let the lasagna cool for a few minutes before slicing and serving. Enjoy!

This is not only delicious; but nutritional and easy to make!

Quinoa Salad with Chickpeas and Avocado

Ingredients:
• 1 cup quinoa
• 1 can (15 oz) chickpeas, drained and rinsed
• 1 cucumber, diced
• 1 bell pepper, diced
• 1/2 red onion, finely chopped
• 1 avocado, diced
• 1/4 cup chopped fresh cilantro
• Juice of 1-2 limes
• 3 tablespoons olive oil
• Salt and pepper to taste

Instructions:

1. Rinse quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and water is absorbed. Remove from heat and let it cool.
2. In a large bowl, combine cooked quinoa, chickpeas, cucumber, bell pepper, red onion, avocado, and cilantro.
3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour over the quinoa mixture and toss to combine.
4. Serve immediately or refrigerate for later. This salad can be served cold or at room temperature.
