Took me over 2 years to figure out how to make a baskey style sauce. I learned its not how much mash goes with vinegar, its how long the mash sits in it.

Old Florida Sauce label on the left new on the right. Nobody knows what pepper sauce is and can't make hot sauce. So hot sauce flavored vinegar it is LOL

just made my famous Galic sauce. This Arbol pepper mash left over is useless to me but makes good compost. If dehydrated, ground to a powder, and vinegar and gums added is how your store bought hot sauce is made.
My sauces are handcrafted in small batches using only the pulp in the peppers after being naturally fermented.
