If I’ve said it it once I said 1 million times…. dinner doesn’t have to be complicated— nor does it have to be a feast that takes hours to prepare.

Fun fact- frozen fruits and vegetables are actually harvested at peak whiteness so not only are they often less expensive but they’re also usually more delicious.

I promise you make delicious, healthy dinners, and cannot get stressed about it.

Anyone else feel like the day after a long weekend is just playing catch-up? Back to routines, catching up on life, figuring out what’s for dinner…

This Easy Eggroll in a Bowl is one of those meals I love for busy weeks because it checks all the boxes: quick, flavorful, balanced, and made with simple ingredients.

And if the weekend looked different than usual? That’s life. One weekend doesn’t change your progress any more than one salad does.

EASY EGGROLL IN A BOWL (4 servings)
1/4 tbsp avocado oil
1/4 tsp sea salt
1/2 tsp black pepper
1 cup shredded coleslaw mix
1 tbsp coconut aminos
1/2 tsp toasted sesame oil
1 tbsp green onion
1 tbsp garlic
3/4 tbsp ginger
12 oz ground chicken

Directions:
➡️ Heat avocado oil in a large saute pan over medium-high heat. Add garlic and ginger. Saute for about a minute, until fragrant.
➡️ Add ground meat and season with sea salt and black pepper. Cook until browned, about 7-10 minutes.
➡️ Reduce heat to medium. Add the coleslaw mix and coconut aminos. Stir to coat. Cover and cook for about 5 minutes, until the cabbage is tender.
➡️ Remove from heat. Stir in the toasted sesame oil and green onions. Enjoy!
