Thank you to everyone who joined FCHS Extension Agent Luanne Fried Hughes at the Margaret E. Heggan Free Public Library for “Bringing Vegetables to the Table: A Celebration of the Harvest,” presented as part of the Functional Foods for Life program.
Functional foods are foods that contain naturally occurring bioactive compounds that may help reduce the risk of chronic disease and support optimal health. Vegetables are rich in fiber, antioxidants, vitamins, minerals, and phytochemicals that contribute to cardiovascular, digestive, and immune health. Our discussion focused on practical strategies for incorporating more seasonal produce into everyday meals while celebrating the nutritional value of the harvest season.
