Here is a piece of New Jersey history they never taught you in school. 🥬 During World War Two, a farm in tiny Seabrook, down in Cumberland County, became the largest vegetable processing operation on earth, feeding soldiers and families with a brand new invention called frozen food.

At its peak, Seabrook Farms froze and shipped millions of pounds of spinach, lima beans, and peas every year, and it took a workforce from all over the world to do it. 🌍 The fields and plant were worked by people from dozens of countries, including Japanese American families who came to South Jersey to rebuild their lives after the war years. It grew into one of the most diverse communities in the country, a little melting pot in the middle of the Jersey farmland.

Next time you grab a bag of frozen vegetables from the freezer, remember it may have all started in a Garden State field. 🚜
