We all love the creamy, tangy, savory flavor of Esquites (Mexican Street Corn), but eating a bowl of heavy mayonnaise and pure starch isn't exactly aligned with our bariatric goals!
We upgraded it! This "Esquites" Chicken Bowl uses plain Greek yogurt instead of mayo, adding massive protein while keeping that authentic, tangy street-food flavor you crave!
🛒 The Grocery List:
3 oz Cooked Shredded Chicken Breast
2 tbsp Roasted Corn Kernels (fresh or frozen)
2 tbsp Plain Greek Yogurt
1 tbsp Diced Red Bell Pepper & Fresh Cilantro
Squeeze of fresh Lime juice
Chili powder & a sprinkle of Cotija cheese
👩🍳 How to Build It:
In a bowl, mix the Greek yogurt, lime juice, and chili powder to create your creamy "Esquites" dressing.
Fold in the shredded chicken, roasted corn, red bell peppers, and cilantro until everything is beautifully coated.
Top with a final squeeze of lime and a sprinkle of cotija cheese!
RDN Tip:
Corn can be slightly tough to digest right after bariatric surgery due to its fibrous skin. By keeping the corn portion small and using it for flavor rather than the main base, you avoid bloating while still enjoying the taste!
