Fresh spaghetti for dinner!

Using the Phillips pasta extruder:
600g khorasan flour, freshly milled
200 ml and 1 egg mixed

Add flour to mixer. Apply lid, turn on machine so that begins to stir. Pour in water and egg mixture slowly over about 30 seconds.
Let it mix the full 3 minutes but do not let it extrude. Turn off the machine and let the dough rest for 20 to 30 minutes. Begin the mixing cycle again this time allowing the pasta to extrude after the 3 minutes of mixing. Dough should resemble wet sand in the mixer. Cut your spaghetti to your desired length.

Boil for 7 to 10 minutes in salted water until al dente.
