Another quick, easy, delicious & nutritious sheet pan dinner! I was never a huge fan of chicken thighs but they work so well for sheet pan meals & I'm starting to enjoy them more lately. They're always juicy & don't dry out as easily as chicken breasts. 😁 with this meal I used golden beets (lover here!), asparagus & julienne red peppers. I season with avocado oil, salt & pepper. Bake at 400 degrees for 20-30 minutes and you've got dinner in a snap! Trick is to use as many different colored veggies to get the most nutrient dense meal.
