Guess what's coming up on June 17th? It's National Eat Your Vegetables Day! Not that we shouldn't be eating a few more veggies on a regular basis, this day is a reminder of how important it is to get enough of them in our diet. So, in honor of the day and in keeping with the understanding that kids will probably NOT want to participate with enthusiasm, I came up with what I named The Secret Loaf. What's the secret? There are 4 cups (yes, 4 cups) of fruits and veggies in it and I defy the kids to pick out the carrots and zucchini in the middle of the apples and raisins. My husband, a child at heart, devoured most of it before I could snap a picture. Here you go:

Stone fruits (peaches, nectarines, plums to name a few) aren't just for dessert or a snack. They can be tossed in a salad for an unexpected pop of flavor or made into salsas to top fish or pork. Here they are combined with shallots and chicken thighs for a sheet pan meal that is easy to create and easy to clean up. This recipe serves 4 but is easily doubled as long as you use a bigger sheet pan. Enjoy - we did!

It's berry season! In our house, it's been blueberry muffins, raspberries mixed in with my yogurt, blackberry cobbler and sheet pan pancakes with a berry mix including strawberries. I'm also buying lots of extra berries to freeze for later. All of them low in calories, high in fiber, vitamin C and antioxidants. One cup of mixed berries is roughly 80 calories. Not bad at all.
Here's a shortcake recipe that is a little on the rich side but is packed with unsweetened fruit with a dollop of unsweetened whipped cream on top. Cuts a few calories and I don't think you will miss the sugar - the fruit is sweet enough on its own. Here you go :

When I was young, the only place we ever experienced salmon was at my southern grandmother's house. She would create these smelly cakes with canned salmon. And the bones, ugh! Needless to say, I wasn't a fan. Fast forward to today and here is a recipe that I've put together through trial and error. Full of fresh salmon, dill, lemon and other spices, these are moist and flavorful. I serve them with broccoli slaw and whole grains or on a brioche roll with lettuce, tomato and tartar sauce. Enjoy!

Who remembers the carrot salads from years ago? Carrots, raisins, sometimes canned crushed pineapple, loads of mayo and maybe some added sugars. Right up there with the Jell-O molds! So, I came up with this alternative - Low Fat Tangy Carrot Salad. Easy, easy, easy! I took out the mayo, added low fat Greek yogurt, eliminated the canned pineapple and added freshly squeezed lime and orange juices. Refreshing! Great for a picnic or brunch side dish or as an addition to sliders or wraps. Side note - I used multi-colored carrots just because I had them but that is not necessary. Hope you enjoy!

Here is one of those breakfast breads that is really guilt free - low sugar, low fat, and great flavor from the combination of raisins, walnuts and unsweetened applesauce. When spring rolls around, I think of fresh herbs and use them as much as possible since they are now readily available, either in the garden or the grocery store.
With that said, here are 2 easy recipes that I paired the other night for a great weeknight dinner. The different flavors worked well without fighting each other. The fish benefits from fresh basil and lime juice and the hearty salad with orange slices lets the mint shine through. (Just for the record, I don't grow mint except in containers as it's the marauder of the garden - it takes over everything and getting rid of it is like trying to get rid of bamboo - impossible!)
