Dates, oats, chia seeds, pistachios, fresh lemon juice, lemon zest, and turmeric blended together and rolled into 24 little balls. 154 calories each, no baking, dairy free, plant based, and they keep in the fridge all week. Mashed ripe bananas folded into whole wheat batter with cinnamon, coconut sugar, almond extract, and chopped walnuts. Six pancakes, 208 calories each, and they taste exactly like the real thing. Let your kids mash the bananas. It's the best part and it buys you five whole minutes of peace.

5 ingredients, 15 minutes, 237 calories a serving, and it works on a sandwich, in a lettuce wrap, or straight out of the bowl with crackers. The apple and pecan combo does something in there that I was not expecting and now I cannot stop making it.

Soak the cashews, blend them with water until it looks like pancake batter, pour it onto parchment, bake 15 minutes, flip it, bake 15 more. That's the whole thing. Vegan, gluten free, grain free, and it works as a pizza crust, a wrap, or just torn up and dipped in hummus.

The double parchment and careful flip are the whole secret. Do not skip that step.

Frozen potatoes, turkey sausage, red and orange bell peppers, onion, and low-fat cheddar layered twice, then 12 eggs whisked with Dijon, salt, pepper, and skim milk poured right over everything. 8 hours on low. 28g of protein at 335 calories and the whole house smells incredible when you walk into the kitchen. Feeds 8 people with zero morning effort.

Cook it on low only. The recipe is very clear about this and I am passing that warning along.

Slice it into rounds, brush with olive oil, salt it, bake at 400 for 15 minutes until it firms up and gets those golden edges. Then marinara, fat-free mozzarella, back in the oven for 10 more minutes, fresh basil on top. 143 calories for 10 slices. Keto, vegetarian, no dough required, and it tastes like real pizza in a way I cannot fully explain.

Pineapple, mango, mandarins, red grapes, kiwi, and raspberries tossed in a skinny simple syrup made from lime juice, pineapple juice, honey, lime zest, and fresh ginger. 124 calories a cup, dairy free, and the dressing can be made a day ahead so all you have to do is assemble and show up.
