I thought I’d share a little story this Mother’s Day about one of the craziest shifts I ever worked in the restaurant business and I still remember to this day

🥬🍣 This might be the easiest way to turn a head of iceberg lettuce into something absolutely addictive 😂🔥
Think sushi roll meets crunchy lettuce wrap with spicy seafood salad, fresh veggies, and a burrito-style rollup that slices perfectly down the middle 🤤👏
Fresh ✔️�Crunchy ✔️�Spicy ✔️�No rice needed 😎
Sushi Style Lettuce Wrap 🍣🥬
Ingredients
* 1 head iceberg lettuce
* Shredded red cabbage
* Shredded carrots
* Thinly sliced cucumber
Salad Mixture
* 1 can hot pepper tuna
* 3 oz imitation crab
* 1 tin smoked salmon
* 3 tbsp mayonnaise
* 1 tbsp chili crisp
* 2 tsp furikake
* 1/4 cup scallions
Instructions
1️⃣ Prepare the salad mixture by combining all ingredients in a bowl and mixing until fully coated.
2️⃣ Shred and slice all your vegetables. Remove the core from the head of iceberg lettuce and carefully pull out the inner layers to create space for filling.
3️⃣ Layer in the shredded cabbage, carrots, cucumber, and 1/3 of the seafood salad mixture inside the lettuce head.
4️⃣ Place the stuffed lettuce head onto a sheet of parchment paper and tightly roll it up like a burrito.
5️⃣ Slice down the middle and serve immediately 🔥🥬🍣.

Crispy Mahi Tacos!! With Golden Lava Sauce

Gr**go Chicken Queso Casserole

Ingredients:

* 2 lbs ground chicken
* 1 can diced tomatoes w/ chilies
* 1 can diced green chiles
* 1 tbsp taco seasoning
* 1 tbsp ranch seasoning
* 1 cup cooked white rice
* 1 jar chili con queso dip

Instructions:

1. In a large pan, brown the ground chicken and season with taco seasoning and ranch seasoning.
2. When the meat is about ¾ cooked, add in the diced tomatoes with chilies and green chiles.
3. Continue cooking until the liquid has reduced by about half.
4. Stir in the cooked white rice and mix well.
5. Once most of the liquid has been absorbed by the rice, pour in the queso dip and stir until everything is fully combined and creamy.
6. Serve with hard or soft tortillas and load it up with your favorite taco toppings 🌯🔥

If you didn’t grow up in the Mid-Atlantic, I’m sorry… but your breakfast standards might be a little off 😅

Around here, there are only two real breakfast sandwiches:

🥇 Pork Roll, Egg & Cheese
🥈 Scrapple (crispy, or don’t even bother)

And that’s it. That’s the list.

You can keep your bacon. Sausage is fine… I guess. But neither hits like that salty, crispy-edged pork roll stacked with melty cheese and a perfectly cooked egg on a soft roll. It’s not just breakfast—it’s a personality trait.

And scrapple? Yeah, I know people love to hate on it… until they try it done right. Crispy outside, soft inside, a little maple syrup or hot sauce action? Game over.
