Have you ever had grilled potato salad? Oh my damn!!
I par boiled the potatoes, tossed them in oil with sliced onions and some salt and pepper and cooked them on some foil on the grill.
The dressing was a concoction 😆
I will be making it again and writing it down.
I used:
Avocado mayo, Greek yogurt, dill pickle mustard, fresh dill and parsley, dried chives, salt and pepper, minced garlic and a splash of white wine vinegar and a little of the juice from a jar of banana peppers.
Let me tell you I did NOT make enough of that potato salad 😋
I will be making it again soon because there aren't enough left overs 😆
The chicken are thighs seasoned with Kinders garlic and parmesan seasoning.

Some mornings, “healthy” looks a whole lot less fancy than social media makes it seem. 😅
This breakfast took me maybe 5 minutes because I did a little prep work ahead of time. Yesterday I roasted potatoes, sautéed zucchini, peppers, and onions in avocado oil with garlic and seasonings, and cooked up some Italian turkey sausage. This morning I just tossed everything into the air fryer to heat up while I cooked a couple eggs. Easy. Filling. Balanced. Done. 🙌
And yes, veggies at breakfast count too. 👏 Your meals don’t have to be complicated to support your goals. A little protein, some fiber-rich carbs, healthy fats, and color on your plate go a long way.
This is one of my favorite “real life” meals lately because it feels comforting and practical without spending half the morning in the kitchen.

I have been playing with some new recipes.

Tonight was dutch oven roasted chicken with veggies. I used herbs from my porch like sage, Greek oregano, thyme and rosemary. Lemon, and garlic as well.

Turned out delicious!

My husband inhaled his plate 😆

I reduced the drippings, not as a gravy but a light pan sauce. Everything has a light lemon herb flavor 🤌

Quick, simple, and actually filling because your shake shouldn’t leave you hungry 30 minutes later.

Tonight I cooked some of the pork chops I posted about earlier. They were so delicious.

6 1" thick boneless pork loin chops. I seasoned with a garlic parm seasoning if you don't have that then you could use, salt, pepper, granulated onion and garlic.
Cook them over medium heat with about 1-2 tbsp of avocado oil. I put the lid on the pan to help retain moisture, flip about 4-5 minutes in. I cooked them until they hit 145° internal temp. Remove from the pan and set aside. Add a little butter to the pan if needed, I tossed in a small shallot and about 4 cloves of garlic all finely minced. Cook until golden then de-glaze the pan with 3/4 cup of chicken stock. Stir in a container of Garlic & Herb Borsin cheese (that was at room temp) and let simmer a minute for the sauce to thicken a bit. Put the pork chops back in the pan to finish cooking in the sauce.
I served them with mashed potatoes and a side salad.
This was so good!!!
