🍨 Sorbet or ice cream—which one causes the bigger glucose spike?

The answer may surprise you.

Although sorbet is lower in calories and fat, its carbohydrates can be absorbed more quickly. The fat in ice cream slows digestion, which may delay and reduce the initial glucose spike—but that doesn’t automatically make ice cream the healthier choice. The response may simply happen more slowly and last longer.

This is why metabolic health is about more than counting calories or judging one glucose reading. Understanding how protein, fibre, fat and carbohydrates work together can help us make more informed choices—without giving up every food we enjoy.

You may not need to change everything on your plate—sometimes, changing the order can make a difference.
Try eating your meal in this order:
🥦 Fibre first
🍗 Protein next
🍚 Carbohydrates last
Starting with fibre-rich vegetables, followed by protein and then carbohydrates, may help slow digestion, support fullness and create a steadier post-meal blood sugar response.
It is a simple habit that does not require counting calories, eliminating entire food groups or making your dinner unnecessarily complicated.
