Is your garden overflowing with zucchini? Here's a great alternative to your run of the mill zucchini bread:
Zucchini protein muffins:
Ingredients
1 ½ medium ripe bananas
1 medium zucchini
3 eggs
1 tsp vanilla extract
1 C almond flour
¾ C flaxseed meal
1 tsp baking soda
½ tsp baking powder
Pinch of salt
½ tsp cinnamon
½ C vanilla protein powder
1/3 C natural peanut butter
Instructions:
1.Preheat oven to 350 degrees. Grease muffin tin or use muffin liners
2.In a large mixing bowl, mash the bananas with a fork.
3.Shred the zucchini. Squeeze out the extra moisture then add to the bowl.
4.Add the eggs and vanilla, use the fork to mix well.
5.Stir in the almond flour, flaxseed meal, baking soda, baking powder, salt, cinnamon and protein powder.
6.Fold in the peanut butter.
7.Pour the batter into 12 muffin cups.
8.Bake for 25 minutes. You can start checking after 20 minutes. Look for golden brown tops. Insert a toothpick into the center of one muffin. When it comes out clean they are done!
These freeze well and are great to have on hand for busy mornings or between-meal snacks!
