Wizzy S Salad for dinner… a little nutrition wisdom in a bowl. 🥗

Instead of loading it up with fatty meat and heavy dressing, I used a moderate amount of lean chicken breast and a mostly vinegar-based dressing to keep things light, while a heaping tablespoon of feta added richness and satisfaction.

I tossed in a couple teaspoons of pepitas -these tiny green powerhouses bring magnesium, zinc, healthy fats, and a bit of extra protein to the party. 🌱

Strawberries added natural sweetness, bright flavor, and a pop of color without turning the salad into dessert.

One thing I love about THM is that wisdom often looks like balance, not excess. Sometimes the best meal isn’t the one with the most of any one ingredient. It’s the one where each ingredient brings something valuable to the table.

What’s the most boring healthy meal you eat on repeat?

Mine is kefir pudding. This morning I added some granola to make it extra delish.
Not because it’s exciting.
Not because it’s Instagram-worthy.

Because it works.

I think we spend too much time searching for the perfect meal plan and not enough time building a list of meals we’ll actually eat on a random Wednesday.

Crunchy Chicken Chopped Kale Salad (THM S)
Who needs to order in?!

Ingredients
* 1 bag kale chopped salad mix
(use the greens/cabbage, discard craisins and dressing)
* 4 to 5 oz cooked Realgood chicken nuggets, chopped
* 1/2 cup cherry tomatoes, halved
* 2 to 3 Tbsp feta cheese
* Tbsp pepitas
* Optional: a few artichoke hearts, chopped

Dressing: olive oil + red wine vinegar + garlic + Italian seasoning + shaker Parmesan

To Assemble
Pile the kale mix high on a plate.
Top with warm crunchy chicken, tomatoes, feta, and any extras. Add dressing right before eating.

The magic here is the contrast:
crunchy + creamy + salty + fresh. It’s basically a little edible confetti parade.
