Black-Eyed Pea Salad with Avocado from Food Network Magazine takes 10 minutes, and most of that is standing around waiting for a shallot to calm down in an ice bath. Swapped in a watermelon radish because I wanted the bowl to look like it tried harder than it did.

Creamy, no mayo, loaded with fiber and protein, and it holds up fine in the fridge if your guests are late.
