Comfort food, with zucchini doing the layering 🧀🍅
Ingredients
4–5 medium zucchini, sliced lengthwise
3–4 cups grated mozzarella
Fresh parsley, for garnish
For the meat
2 tbsp olive oil
2 lbs ground beef
1 tsp garlic powder
1 tsp black pepper
1 tsp paprika
2 tsp sea salt
½ tsp dried thyme
¼ tsp dried oregano
¼ tsp dried or fresh rosemary
For the sauce
1 tbsp olive oil
4 cloves garlic, minced
⅓ cup onion, chopped
2½ cups canned whole peeled tomatoes, no sugar added
1½ tsp fresh rosemary, chopped
1 tsp sea salt
½ tsp black pepper
Instructions
Sauté the onion and garlic in olive oil. Add tomatoes, rosemary, salt, and pepper; gently crush the tomatoes and simmer for 20 minutes, until thickened.
Brown the ground beef with the spices in olive oil. Drain excess liquid.
Sear zucchini slices in a dry skillet over medium-high heat for 2 minutes per side.
In a 9x13-inch baking dish, spread 3 tbsp sauce. Layer zucchini, mozzarella, meat, and sauce; repeat, finishing with mozzarella.
Bake at 350°F for 38 minutes, then broil for about 3 minutes until golden.
Rest 15–20 minutes before slicing.
