Our menu this week that goes out tomorrow at 8:30 am is:

Turkey Enchilada Meatballs with Spanish Rice
2-3 Servings/$28
Meatballs made from ground turkey, chopped green onions, eggs, breadcrumbs and cilantro along with spices like chili powder, cumin, salt and pepper. The meatballs get baked in the oven and are topped with enchilada sauce, shredded cheddar cheese and green onions. They are served on a bed of Spanish Rice. Full of flavor and family friendly!

Honey Cranberry Chicken with Ricotta Cheese and Candied Pecans + Mashed Sweet Potatoes

I am super excited to make this pretty and festive meal! Two six-ounce chicken breasts that are seasoned with fresh rosemary and sage, as well as balsamic vinegar and olive oil before being roasted in the oven. They are topped with ricotta cheese that is infused with honey. Topped with blistered fresh cranberries and candied pecans. The chicken is served next to sweet potatoes that have been mashed with butter and sea salt.

We are excited to make this fun spin on a shepherd’s pie this week! It is Indian inspired and tasty! Topped with creamy russet mashed potatoes that are seasoned with salt and cumin. If you like our Indian meals, you should try this one!

You are going to love this salad! It is filled with all kinds of healthy ingredients that are eye catching and tasty. A bed of wilted kale with cooked quinoa is the base for this winter salad. It is topped with a 6 oz salmon filet that was marinated overnight in a homemade honey mustard dressing before being baked in the oven. The salad also has diced apples, crumbled feta cheese, pumpkin seeds, pecans, roasted butternut squash, roasted cauliflower, and pomegranate seeds. It is served with a side container of honey-dijon dressing.

Candied Pecan Sweet Potato Casserole
9 Inch round pan for $28 (approx. 4-6 servings)
Pulling out all the stops for this sinful creamy sweet potato casserole with a crunchy candied pecan topping and toasted marshmallows! Sweet potatoes that are whipped with brown sugar, eggs, vanilla and butter and topped with candied pecans and then mini marshmallows to be baked in the oven. Mini marshmallows come on the side for you to add at the end!

Croissant Ham, Egg and Cheese Bake
6 servings/pan $35
This is a new breakfast casserole offering! 6 croissants that are split open and spread with whole grain mustard before adding sliced ham and shredded cheddar cheese. Next, the tops go back on and a savory egg and cream mixture gets poured on so it soaks into them. The tops get brushed with butter and sprinkled with everything bagel seasoning. We will be freezing these after we assemble them for easier transport in your car, so if you want it for Thursday, just put it straight into your fridge at home to thaw it out for baking the next day!


Pumpkin Risotto with Goat Cheese and Dried Cranberries
9 Inch Round pan $28 (approx 4-6 servings)
This risotto is all things fall. Traditional Italian Arborio rice gets cooked with onion and white wine, and is simmered with pumpkin puree, fresh thyme and vegetable broth until tender. Finished with butter and Romano cheese and garnished with crumbled goat cheese and dried cranberries.

We’ve been making this vegetarian loaf for years, and it’s always a big hit with the customers! It is loaded with flavor and has great texture with a zippy sauce! Made from cooked lentils, raisins, shredded apples, fresh thyme, celery, onions, oat flour and ground flax, and topped with a Balsamic Apple glaze. This week we are offering it without a side. It will be 4 slices of the loaf with sauce in the pan. Ready for you to pop into the oven and reheat for dinner!

Salisbury beef meatballs that are served over creamy potato-cauliflower
mash that was mashed with a little bit of cream cheese and butter for extra

Mexican Street Corn Chicken Chowder

This soup
has all the flavors of Mexican street corn in soup form! It is sinful and
delicious and is made by sauteing fresh poblanos in butter with garlic and
onion with paprika, cumin and chili powder, and then add diced potatoes,
shredded chicken, fire roasted sweet corn, cream and chicken broth. After it
simmers for a while we add sour cream, cilantro, cotija cheese and fresh lime.

Bourbon Glazed Meatloaf + Creamy Mashed Potatoes & Buttered Green Beans

2-3 Servings/$28

Bringing this back because it was so well loved the first time! Super tender and flavorful beef and pork meatloaf that is made with breadcrumbs, milk, egg, and onion, and is topped with a tasty Bourbon BBQ glaze that included strawberry preserves that we make from scratch and top before baking. The meatloaf gets sliced and is served next to super creamy Yukon gold mashed potatoes that we mash with cream cheese, butter and half and half, as well as steamed buttered French green beans. We can make this gluten-free by using gluten-free breadcrumbs. If you need it that way, please select the gluten-free option in the drop down-box on the website!

Vegetarian Falafel Gyros

This is a fresh meal with all the components for you to assemble some healthy and flavor filled vegetarian gyros! Homemade chickpea falafel patties that we bake in the oven that just need to be warmed back up to fill your naan flatbread. Toppings for the gyros include cucumber tzatziki sauce, crumbled feta cheese, pickled red onions and tomato cucumber salad with fresh mint. This meal cannot be frozen and will be best eaten within 5 days of pick up.

Pork Pozole Rojo

1 Qt/$13

A traditional Mexican soup made from pork and white hominy. Pozole can be made in different ways, but our Pozole rojo is made by slowly simmering the tender shredded pork in a rich red broth made from a mild variety of dried chiles, chicken broth, Mexican oregano, onions, garlic, hominy and pinto beans. The hominy adds a nice toasted corn flavor complimented by the slight spice from the dried red chiles.

Traditional toppings for pozole include shredded green cabbage, thinly sliced radish, lime and red onion if you wish to add that at home!

Sweet and Spicy Shredded Beef + Brussels Sprout Fried Rice

2-3 Servings/$28

This is a brand new meal offering that we are excited to make this week! Beef chuck that’s been marinated in a marinade of sweet chili sauce, honey, rice vinegar, sesame oil, garlic and ginger and is slow cooked with beef broth until tender and easy to shred. The beef is served next to a fried rice that is cooked with gluten-free soy sauce, onions, sesame oil, garlic, scrambled egg, and shredded brussels sprouts. The meal is garnished with chopped green onions and toasted sesame seeds.

Mediterranean Chicken w/ Herb Roasted Fingerling Potatoes

2-3 Servings/$28

6 oz chicken breasts that are marinated overnight in extra virgin olive oil, lemon zest, lemon juice, fresh oregano and garlic. The chicken is roasted in the oven with grape tomatoes, kalamata olives and red onions. The chicken is served next to fingerling potatoes that have been halved and tossed with butter and olive oil as well as Italian seasonings. The whole meal is sprinkled with hand crumbled creamy feta cheese. Very fresh, light and flavorful!

Gnocchi Bolognese Bake

First, we make a hearty homemade Bolognese sauce that is made by slowly simmering equal parts ground beef and ground pork with diced celery, onions and carrot with tomato paste, pinot grigio wine, parmesan cheese rinds and bay leaves. The hearty sauce is finished with heavy cream and is tossed with potato gnocchi and is then topped with nutty pecorino Romano cheese. Ready to be popped into your oven for reheating and enjoying!

Indian Sampler Meal- (Available Vegetarian!)

Indian Butter Chicken + Potato-Spinach (Saag Aloo) with Basmati Rice

2-3 Servings/$28

I love cooking Indian food and am excited to make this for you! Boneless skinless chicken thighs that are marinated with fresh ginger and garlic with lots of aromatic spices such as cinnamon, cumin, garam masala, coriander, turmeric and cardamom. It is slowly cooked with tomato puree and heavy cream until it falls apart. It is served in the pan next to a traditional Indian dish called Saag Aloo which is tender baby potatoes simmered in a richly spiced tomato sauce with baby spinach. If you choose the vegetarian option in the drop-down box, this meal will be the Saag Aloo served next to a sweet and spicy stewed chickpea dish called Chana Masala and it will also come with rice on the side.

French Onion Soup

Cauliflower Dal & Quinoa Green Curry Coconut Soup

Kalua Pork with Aloha Rice and Unagi Mayo Sauce

2-3 Servings/$28

We are making this again after we got so many compliments the first time we offered it earlier this year! Inspired by a traditional meal served in Hawaii! Pork roast that is slow cooked with fresh pineapple, sweet onions, jalapeno and chicken broth until it is tender and falls apart. The pork is served over top the Aloha rice which consists of rice cooked with pineapple, rice wine vinegar, onions and broth. On the side you will get a flavorful sauce made from mayo mixed with cooked mirin and sake, sugar and gluten-free soy. You will reheat the meal and spoon the sauce over right before eating. Garnished with sesame seeds and green onions.
