My 8-year oncology appointment was this week…

My active treatment has been completed for 7 of those years, but the aromatase inhibitor is still part of my everyday life. And it can come with a cost: bones, muscles, metabolism.

So I lift, consistently and intentionally.

Because strength training helps to counter what an AI can do to your body and because I refuse to believe my body is on a downward spiral in menopause and with hormone deprivation.

8 years in and I'm not declining. I am continuing to get stronger day by day! And I want that for you too!

Complete with pickled veggies, sauerkraut, fresh veggies, farm-fresh butter, and hard-boiled eggs. Just your everyday hodgepodge of delicious and nutritious ingredients!

Radish, cauliflower, jalapeño, onion & garlic. All low-carb, anti-inflammatory, and packed with fiber. But the real MVP? Apple cider vinegar, which has been shown to help lower blood glucose.

The recipe:
1 cup chopped cauliflower
1 cup thinly sliced radish
5 thinly sliced red onions
1 small jalapeno
3 sliced garlic cloves
1.25 cup ACV
1.25 cup water
1½ tsp salt.
(All organic ingredients!)

Pack your veggies into a mason jar, pour the brine, and refrigerate for 2+ hrs. That's it. 🙌

Best after 24 hours & keeps for ~2 weeks.

Extra virgin olive oil contains compounds such as oleocanthal, oleuropein, and squalene, which have anti-inflammatory and anti-tumor effects.

However, not all olive oil is made the same! When shopping in the store, look for organic, cold-pressed, dark bottles, a peppery finish, and a recent bottled date.

May is Mental Health Awareness Month...

We know that simply thinking more positively doesn't fix all of our problems; sometimes we need more support and guidance. Normalize seeking therapy. Normalize setting boundaries. Normalize doing what helps YOU as an individual.

Just because you’re short on time doesn’t mean you need to skimp on nutrition. This green, crunchy bowl is full of fiber and phytonutrients, and it's easy to make!

Ingredients:
3 celery stalks
1/2 cucumber
1 jalapeno
Cilantro
2 tbsp pumpkin seeds
1/2 an avocado
Canned mackerel (or other source of protein)
For the Dressing: Juice of 1 lime, 1 tbsp olive oil, 1 tbsp apple cider vinegar, 1/2 tsp salt
*All organic ingredients, please!

Chop vegetables and mix everything in under 5 minutes! A perfect lunch on a busy day.

It's Cinco de Mayo, which means taco bowls!

Our favorite base for a taco bowl is Cilantro Lime Cauliflower Rice, easy, nutritious, and delicious!

Ingredients:
1 head of cauliflower
1 tablespoon avocado oil
2 garlic cloves
2 scallions
¼ tsp Himalayan sea salt
¼ tsp pepper
3 tablespoons fresh lime juice
¼ cup of basil, dill, and parsley
*All organic ingredients, please!

Instructions:
- Place cauliflower in a food processor and process until it resembles rice.
- Heat a large pan over medium-low heat and add avocado oil, garlic, and scallions.
- Sauté for 3-4 minutes.
- Add cauliflower and sauté for another 6-10 minutes.
- Toss with salt, pepper, and herbs.

Load a bowl with your cauliflower rice, some protein, avocado, veggies, and whatever toppings you desire!
