Tuna mousse dip
Ingredients

Preparation
Line a fine sieve with one square kitchen paper and place over a bowl.Empty the tuna can and fromage frais into the sieve and allow to drain for an hour or two, but no more than that because you want to keep some moisture.

Transfer the tuna and fromage frais into a bowl and mix using a fork, until there are no more tuna lumps.

Add the lime juice, chives and egg yolk. Season to taste and mix again until well combined.Cover with food wrap and refrigerate until needed.Take out of the fridge about 20 minutes before serving the dip to come at room temperature.Find more recipes on my blog http://alalemon.com

Almond-Grape Chicken Salad
Ingredients

Preparation
Combine all ingredients in a bowl and mix well.

Serve scoops of the mixture in lettuce cups (or endive spears would work well, too).

Garnish with additional slivered almonds on top. Leftovers of the mixture can be used in a sandwich or served with crackers as a quick snack the next day.

Preparation
Boil your rice a day before till soft and season with one chicken bouillon cube and leave in the fridge to cool. (You can also use this immediately if you don’t want to wait)In a pan, heat up your butter and and olive oil and fry your chopped garlic, onions and ginger on medium heat.

Add your chopped shrimps and stir fry. Season with chicken seasoning cubes and allow to fry for 2 minutes.

Add the chopped vegetables, the white and black pepper, basil, curry and thyme.Break your egg into the pan and stir fry it and add 1 tablespoon of soy sauce.Begin to slowly stir in your rice, one spoon at a time so that all the seasoning is absorbed.

Add the other spoon of soy sauce and stir till all the rice absorbs all seasoning. Check for salt and serve your shrimp fried rice.

Fish Crocchette Appetizer
Ingredients
- Bread crumbs
- Canola oil
- 500 grams cod fillet (or any white fish fillet)
- 2 eggs
- 100 grams flour
- 1 clove garlic
- 1/2 Grated rind of a lemon
- 1 cup milk
- 50 grams parmesan cheese
- 1 bunch chopped parsley
- 400 grams potatoes
- Salt
- 150 grams tuna in olive oil

Preparation
Begin to cook the fish and potatoes.Cook cod in a saucepan.Boil the potatoes in their skins in a pot with the water or in the microwave in a container with two inches of water (for the cooking time in the microwave, read the instruction booklet)

Let cool cod, eliminated any remaining bones. In a bowl add the mashed potatoes, the minced cod, the garlic cooked in the milk, tuna, drained, Parmesan, chopped parsley, salt , egg and the half lemon zest grated.

Mix well the mixture , form into balls to the same size if possible.Coat in white flour, dip in beaten egg and into bread crumbs, fry in canola oil (325 degrees F) until golden , dry on paper towels.

Eton Mess Dessert
Ingredients
- 1/4 teaspoon almond extract
- 1/2 teaspoon almond extract
- 6 almonds, sliced
- 1/4 teaspoon cream of tartar
- 3 egg whites
- Juice of 1 lemon
- 12 ounces light Cool Whip, slightly room temp
- 1 cup powdered sugar
- Pinch of salt
- 2 pounds strawberries, chopped
- 1 teaspoon sugar
- 1/2 teaspoon vanilla extract

Preparation
With an electric mixer, beat egg whites, salt and cream of tartar to soft peaks.Slowly pour in powdered sugar and continue to whip to stiff peaks.

Add almond extract, combining until mixture is smooth and glossy.Line a baking sheet with parchment paper and drop meringue batter in even amounts on the tray.

Sprinkle with almonds.

Bake in a preheated oven at 200 degrees until crisp, approx. 1 1/2-2 hours.Turn off oven and leave meringues in the oven overnight to dry.Just before serving, toss strawberries with sugar and lemon juice. Set aside.With an electric mixer, beat Cool Whip with extracts until combined.Split strawberries and whipped cream amongst six bowls. Crumble meringue cookies over each bowl and stir to mix.

Avocado Chicken Parmigiana
Ingredients
- 220 grams (1/2 pound) Chicken breast fillet, halved lengthways
- 30 grams (1/4 cup) All-purpose flour
- 1 Egg, lightly beaten
- 100 grams (1 3/4 cup) Dried breadcrumbs
- Olive oil
- 4 tablespoons Tomato pasta sauce
- 1/2 Avocado, sliced
- 2 tablespoons Parmesan cheese
- Salad leaves, to serve

Preparation
Preheat oven to 200C/400F fan-forced.

Place chicken between 2 sheets plastic wrap and pound to 1/4-inch thick with a rolling pin.

Coat the chicken first in flour, shaking off excess, then dip in the beaten egg and finally coat well with breadcrumbs.

Place on a baking tray. Repeat with remaining chicken, flour, egg mixture and breadcrumbs.

Spray chicken with olive oil.

Bake for 5 minutes.

Remove from the oven and top each with two tablespoon pasta sauce. Arrange avocado over sauce and sprinkle with cheese. Return to oven.

Bake for 5 to 7 minutes or until golden and chicken is cooked through.

Rösti With Papaya Salad
Ingredients
- 1/4 cup bread crumbs (more or less)
- 2 inches ginger, grated
- 2 green chilis
- 1/4 teaspoon mustard seeds
- olive oil to pan fry
- 1 onion medium size, finely chopped
- 2 cups raw papaya,peeled and grated
- 4 medium size potatoes, peeled and grated
- 1/2 of a medium size red chilli, cut into rounds
- 1/4 teaspoon pepper powder (more or less)
- salt to taste
- 1 teaspoon sunflower oil
- 1/4 teaspoon turmeric powder (haldi)

Preparation
Heat oil in a pan, add the mustard seeds, when they begin to splutter, add the chillies and turmeric powder.

Add the grated papaya and salt and cook for a couple of minutes and keep it aside.Squeeze out the excess water from the grated potatoes.

Place the grated potatoes, onions, bread crumbs, ginger, pepper powder and salt in a bowl and mix well.Take a little portion of the potato mixture, make a ball and gently flatten it.

Sprinkle a few drops of oil on a non stick pan and pan fry the rsti on a low flame till both the sides are evenly golden.

Place the rosti on a serving dish, top it with the papya salad, garnish it with the chillies and serve.

Avocado Chicken Salad
Ingredients
- 2 Avocados
- 10g Cherry tomatoes, cut to half or quarter
- 50ml Extra virgin olive oil
- 2-3 Limes or add to taste
- Mayonnaise
- a dash of black pepper
- 100g Mixed salad, roughly shredded
- 150-200g boneless skinless Chicken breast

Preparation
Season chicken breast with a little salt and pepper then place in a pot of boiling water until cooked. Leave to cool and cut into cubes, set aside.

Cut avocados into cubes.

Place mixed salad in a large bowl and add olive oil and lime juice, toss well and divide mixed salad into two serving bowls.

Place avocados, chicken meat and cherry tomatoes evenly on top of salad.

Drizzle mayonaise and a dash of black pepper over salad and serve.

Banana Almond Cake
Ingredients
- 1/2 cup sliced almonds
- 5 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 6/11 cup mashed banana
- 3 tablespoons Brown sugar, firmly packed
- 3 tablespoons Butter or margarine
- 2/3 cup buttermilk
- 3 large eggs
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 5 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 teaspoons grated orange peel
- 1 1/2 teaspoons salt
- 1 1/2 cups whole-wheat flour

Preparation
Melt 1/4 cup of the butter.

Pour 2 tablespoons of the melted butter into an 8-cup bundt pan; brush the butter over pan sides and bottom.

Mix together the brown sugar, cinnamon, nutmeg, and almonds.

Sprinkle bottom of pan with half the brown sugar mixture; combine the remaining mixture with the remaining melted butter; set aside.In a large bowl, beat remaining 1/4 cup butter with granulated sugar until blended. Beat in eggs, 1 at a time, until blended. Beat in orange peel and banana.

Mix all-purpose and whole-wheat flours, baking powder, soda, and salt.

Add to banana mixture along with the buttermilk; stir until well blended.

Pour half the batter into prepared pan. Spoon remaining brown sugar mixture evenly over top; cover with remaining batter.

Bake in a 350 degrees oven until a long wood skewer inserted into the thickest part of the cake comes out clean, about 50 minutes. Cool the cake on a rack about 5 minutes, then invert cake onto a serving plate.

Serve the cake warm or cool. This recipe yields 12 servings.

Clementine Cake
Ingredients
- 5 clementines (about 375 g total weight)
- 6 eggs
- 200 grams sugar
- 250 grams ground almonds
- 1 teaspoon baking powder

Preparation
Put the clementines in a pan with some cold water, bring to the boil and cook for 2 hours.

Drain and, when cool, cut each clementine in half and remove the pips.

Mix and pulse the clementines to a pulp- skins, pith, fruit and all. Preheat the oven to gas mark 5/190C. Butter and line a 21cm Springform tin.

Beat the eggs and add the sugar, almonds and baking powder.

Mix well, adding the pulped oranges.

Butter and line a 21cm Springform tin.

Pour the cake mixture into the prepared tin and bake for an hour or until baked (when a skewer will come out clean). Cover the top with foil or greaseproof paper after about 40 minutes to stop the top burning.

Remove from the oven and leave to cool, in the tin. When the cake's cold, take it out of the tin.

Grilled Swordfish With Melon-Mint Salsa
Ingredients
- 4 - OZ SWORDFISH STEAKS
- 1/4 CANTALOUPE (OR OTHER MELON) DICED
- 2 tablespoons MINCED MINT
- 1 tablespoon MINCED BASIL
- 1 tablespoon LIME JUICE
- 1/2 tablespoon HONEY
- BUTTER
- SALT& PEPPER
- GARLIC SALT

Preparation
Trim the swordfish so that the skin and dark portions are removed. Lightly salt & pepper and sprinkle w/ garlic salt. Set aside.

Place the diced melon, mint, basil, lime juice and honey in a bowl. Stir to combine. Set aside.

Grill the swordfish on medium high heat for 2-3 minutes per side. (adjust for fish thickness).

When the fish is finished. Turn off the heat and let sit for 1-3 minutes. Top with a paper thin shaving of butter. Salt & pepper to taste.

Serve atop the melon salsa.

Spinach pie with home made dough
Ingredients
- 2 cups all purpose flour
- 3.5 oz butter (1 stick)
- 1 carrot
- 5 eggs
- ½ lbs. feta cheese
- ½ bunch fresh dill
- 1 lbs. frozen spinach
- 3 tbsp. milk (for oiling too)
- 1 onion
- pepper
- salt
- 3.5 oz sour cream
- 1 cup water

Preparation
In a large bowl mix the butter and flour together until crumble (the butter must be at room temperature).Then add in the egg (slightly beaten), water and salt and knead until the dough is not sticky anymore.

Put the dough in the fridge, Covered in plastic, until we make the filling.Filling:In a bowl mix the spinach (you SHOULD defrost the spinach and drain it very well Before, Usually I defrost it in the microwave about 10 to 15 min., That's easier) with the shredded cheese, sour cream, chopped dill, chopped onion and shredded carrots (very thin). Beat the eggs and stir in (but keep one yolk for oiling the surface of the pie)Season with salt and pepper as for your keys.

I used half pound of feta cheese in the filling But you CAN add 4.5 oz of feta and 3.5 oz of cheddar cheese (cheddar Makes the more homogenous the filling)Preheat the oven at 356 F. Now you CAN take out the dough from the fridge and divide it in two, one piece is for the bottom of the market and Should Be Bigger, The Other One Will Be for the top of the pie and Will Be Smaller. From the second one we Will make strips and We will make the grid.

Make the first sheet with the rolling pin a little bit Thicker, THEN oil the tray and put it inside Covering the sides of the tray.

Add in the filling, THEN make the other sheet and cut strips. Them interpolated on top of the pie and spread over the yolk mixed with 3 tbsp. of milk. Cook until is nice roasted.
