🌱 Growing connections at the CT Academy!

Last night, the Connecticut Academy of Nutrition and Dietetics Board of Directors gathered in Middletown for our September board meeting, followed by a wonderful tour of the Community Health Center, Inc. greenhouse and rooftop garden.

A special thank you to the whole CHC team and especially Timothy, Greenhouse & Garden Manager, and Mary, Lead Dietitian, for welcoming us and sharing the incredible work happening at CHC to connect fresh food, nutrition, and community health. šŸ„¬šŸ…šŸŒæ

Thank you as well to our CT Academy board members who made the trip to Middletown and continue to give their time, expertise, and energy to our organization. It was wonderful to spend time together, learn from our community partners, and see this innovative work firsthand.

We’re grateful for opportunities like these to strengthen connections across Connecticut and continue working toward a seat at every table for nutrition and dietetics. 🌱 🪓

Cyclosporiasis Consumer Prevention: What Helps—and What Does Not - from Dr. Indu Upadhyaya with UConn Extension

DO
• Wash hands with soap and running water for at least 20 seconds.
• Rinse produce under clean running water before eating, cutting, peeling, or cooking.
• Discard outer two to three layers of leafy greens when practical.
• Scrub firm produce with a clean produce brush.
• Separate unwashed produce from washed and ready-to-eat foods.
• Refrigerate cut, peeled, or cooked produce within 2 hours—or within 1 hour above 90°F.

KNOW THE LIMITS
• Rinsing is recommended but may not reliably eliminate Cyclospora.
• Commercial ā€œpre-washedā€ or ā€œready-to-eatā€ processing may not remove the parasite.
• Standard chlorine-based sanitizers are not reliable against Cyclospora.
• Whole heads of lettuce may permit removal of outer leaves and individual rinsing, but are not risk-free.

DO NOT
• Do not wash produce with soap, detergent, bleach, or household disinfectants.
• Do not eat, serve, sell, or donate recalled products.
• Do not place washed produce back into an unwashed container or dirty sink.
• Do not prepare food for others while experiencing diarrhea.

COOKING IS THE MOST RELIABLE CONSUMER CONTROL
For produce that can be cooked, FDA advises cooking to at least 158°F (70°C). Cooking is more dependable than washing or routine chemical disinfection for destroying Cyclospora. Brief warming or wilting may not heat the entire food uniformly.
