What started as a conversation about the incredible wellness businesses in Teller County has turned into Teller County’s very first Wellness Expo.

Thom and I created this event to honor the amazing mind, body, and soul wellness businesses that truly care about this community and are passionate about making a difference.

Hosted at the incredible new Grit to Greatness athletic performance center, this event will bring together some of Teller County’s top wellness professionals for a day of connection, movement, education, and inspiration.

When making meals for others, whether it's a new mom or someone going through cancer treatment, having other medical struggles, or someone grieving, you want to make sure it's nutritionally well rounded!

The most nutritious + delicious side 😋 Feta bean salad!

I (& my mom) have been making a version of this for years. Plant protein, fiber, veggies, vitamins, minerals antioxidants! This easy side has it all!

This time I adapted the recipe from and it was a hit at my potluck!
-3 (15-ounce) cans black beans, drained and rinsed
-1 (15-ounce) can whole-kernel corn (I used 1.5 c thawed frozen corn)
-1 cup chopped cilantro
-2 lemons, juiced (the original recipe calls for limes)
-1/2 cup chopped green onions
-1 to 2 cups crumbled feta
-1/3 cup red wine vinegar
-Sea salt, cracked black pepper, and cumin to taste
