Spent my break between clients preparing fava beans. These are a favorite, but they are time-consuming to prep. Thank you Sun Gold Farm.

First shell them from the outer pod.
Blanch for about 2 min in salt water, after put in ice bath.
Then remove them from there outer shell.

They are ready to eat, put in salads, puree, sautéed in butter, or any way you would like to enjoy them.

I’m obsessed with this fruit salad. Here’s everything you need to make it: pineapple, bananas, oranges, maple syrup, and coconut flakes.

I cut up all the fruit, add maple syrup to taste, and top with toasted coconut. I don’t use exact measurement - adjust everything to your liking.

I took the last month to focus on getting everything in place to renew my license. Every two years in the state of Oregon, we are required to complete continuing education.

I finished taking an ethics class working through the lens of the nervous system. I started taking some online short lymphatic based classes. These are both topics I am very interested in. I am looking into classes for the next renewal to take to better support my clients.
