Overview and History
Mendocino Coast Clinics is a true example of a grass roots organization, with historical roots as a free clinic to being a community based health clinic operated by a patient driven not for profit Board of Directors for nearly 30 years. Medical care was the driving force as the clinic transitioned from the Mendocino County Health Department to the nonprofit Mendocino Coast Cli

nics. Initially focusing on primary and preventative care, services have grown to include wellness exams, diabetes education, podiatry and dermatology. Behavioral Health Care was added in 1995 and has grown from providing counseling to also to including Behavioral Medicine with psychiatric consultations, psychopharmacology, suboxone treatment for opiate addiction and pain management. In 2010 case management services were added for these patients as well as for homeless people. In 1997, the health problems related to the lack of accessible dental care motivated MCC to add dental care as another major component of the organization for adults and children. In 2005, MCC assumed the obstetrical and gynecology providers which also included perinatal services, childbirth classes and breastfeeding support. In 2010, MCC opened the Teen Clinic, now Blue Door@MCC, offering an array of health care, services and education to local youth. In 2011, the local pediatric practice affiliated with MCC bringing specialized care and service to the community’s infants, children and young adults. In 2013, the Liz Irwin Wing, funded by the Affordable Care Act, was opened. The Mendocino Coast Clinics’ service area runs along 50 miles of rural and geographically isolated portions of the northern California coast in Mendocino County. MCC mission is to build a healthy community by providing patient-centered health care to all coastal residents.

This month, MCC's Registered Dietitian Susie has chosen a delicious Pasta Salad recipe that’s packed with crisp vegetables and flavorful ingredients. It’s an easy make-ahead dish for picnics, BBQs, potlucks, or lunch during a busy week.

Pasta Salad
16 ounces rotini or any medium pasta shape
1 medium English cucumber, chopped
1 pint grape tomatoes, halved
1 small bell pepper any color, chopped
¼ cup finely diced red onion or sliced green onions
1 cup Italian dressing or homemade dressing
¼ cup sliced black olives (optional)
3 tablespoons chopped fresh parsley
⅔ cup crumbled feta cheese, or to taste
Salt and black pepper to taste

In a large pot, boil pasta in salted water until al dente (firm) according to package directions. Drain and rinse under cold water to cool.

Meanwhile, chop the cucumber, grape tomatoes, bell pepper, and red onions.

In a large bowl, combine the cooked and cooled pasta, prepared vegetables, Italian dressing, sliced olives (if using), and fresh parsley. Toss well to coat. Season with salt and pepper to taste and gently stir in feta cheese.

Refrigerate for at least 2 hours before serving to allow the flavors to blend. Makes 12 servings.

Es un plato fácil de preparar con antelación, ideal para pícnics, barbacoas, comidas compartidas o para el almuerzo durante una semana ajetreada.

Ensalada de pasta
16 onzas de pasta rotini o cualquier pasta de tamaño mediano
1 pepino inglés mediano, picado
1 pinta de tomates cherry (tipo uva), cortados por la mitad
1 pimiento morrón pequeño (de cualquier color), picado
¼ de taza de cebolla roja finamente picada en cubitos o cebolletas (cebolla verde) en rodajas
1 taza de aderezo italiano (comercial o casero)
¼ de taza de aceitunas negras en rodajas (opcional)
3 cucharadas de perejil fresco picado
⅔ de taza de queso feta desmenuzado, o al gusto
Sal y pimienta negra al gusto

En una olla grande, hierva la pasta en agua con sal hasta que esté *al dente* (firme), siguiendo las instrucciones del paquete. Escurra y enjuague bajo agua fría para enfriarla.

Mientras tanto, pique el pepino, los tomates cherry, el pimiento y la cebolla roja.

En un tazón grande, combine la pasta ya cocida y enfriada, las verduras picadas, el aderezo italiano, las aceitunas en rodajas (si las usa) y el perejil fresco. Mezcle bien para que todos los ingredientes se impregnen del aderezo. Sazone con sal y pimienta al gusto e incorpore suavemente el queso feta.

Refrigere durante al menos 2 horas antes de servir para permitir que los sabores se mezclen y se asienten. Rinde 12 porciones.
