My dream began over 15 years ago when I discovered the incredible world of whole plant foods: vegetables, fruits, and herb
I read Dr. N.W. Walker's Fresh Vegetable and Fruit Juices and Michael T. Murray's The Encyclopedia of Healing Foods. I loved these books. They opened my eyes to the nutritional value and remarkable properties of plants, and I found every page fascinating.
That enthusiasm inspired me to begin blending and juicing everything I could get my hands on, from potatoes and melons to leafy greens and herbs like dandelion and lemongrass.
One of those creations was the Honeydew Melon, Spinach, and Lemongrass juice in this video.
That season of my life became the foundation and launching pad for SpaJuiceBar.
When I created SpaJuiceBar, my goal was simple: I wanted to share what I was learning about food and how it made me feel. I believed juicing and exercise were part of the fountain of youth, not because someone told me so, but because of my own experience.
I felt great.
I felt confident.
My mind felt clear, and most importantly, I felt connected to the Divine.
It was an honest experience rooted in kindness toward my body, mind, and spirit. This lifestyle taught me to love myself more, and I wanted you and many others to experience that same feeling.
SpaJuiceBar was birthed in my kitchen.
Fifteen years later, my passion has expanded to herbal teas and functional plant powders, but my love for juicing has never left me.
Finding this video brought back so many wonderful memories, and I realized I have so many recipes I'd love to share with you
So let's start with this one.
Give it a try. I think you'll love it, especially when you use a ripe honeydew melon.
A little tip: I juiced the rind of the honeydew melon because it contains additional nutrients and antioxidants. That's completely optional, but it's something I've always enjoyed doing.

Recipe
• ½ ripe honeydew melon�• 1 bunch spinach�• Approximately a 3-inch stalk of lemongrass
Juice all the ingredients and enjoy!
Tip: Lemongrass has a bold flavor, so start with a small amount. You can always add more, but you can't take it out.
