For my 21st wedding anniversary, my family came with me to Miami to run my 21st Hyrox race ❤️ This is my 5th season racing, and also my very first season not qualifying for worlds. I really thought I’d have some feelings about that, 🤔but I really don’t. My pro doubles partner and I only made two attempts this whole season. This past weekend in Miami was one of our slowest times to date, but our achievements aren’t always based on our wins, sometimes they’re based on our accomplishments. In a time with this sport, where I’ve found that podium finishes and pr’s are what people really want to highlight, Heather, I’d like to highlight you. Although you keep saying I’m a beast and talk like I stepped up for our race, the reality is that you were actually the stronger one. You pushed through an injury and blinding, nauseating pain, so that I could cross that finish line. You didn’t give up even though I’m sure your body would have loved to, and you knew I would have understood if we needed to stop our race. Thank you for being my teammate and for sharing the best recovery beach day with me and my fam. Can’t wait to race with you next season! 🫶

With so many after school activities, we sometimes get home late, or I’m whipping together a quick dinner on the go! I need simple meals that don’t require a whole lot of prep and cook time. I always keep frozen vegetables stocked up, in case I don’t have time to chop fresh veggies. One of my go to meals is insanely easy, with only a few simple ingredients. Ground chicken, Asian style vegetables and paleo teriyaki sauce. You can also make it with eggs, shrimp or a protein of your choice. Super simple, super delicious 👌
🥢🥡GROUND CHICKEN STIR FRY🥟
🍗 1 pound lean ground chicken
🥕1 bag frozen Trader Joe’s Asian Style Vegetables (I toss the included sauce, since it’s full of sugar)
🥦 1-2 cups frozen Broccoli Florets
🥢 1/2 bottle Primal Kitchen No Soy Paleo Teriyaki Sauce
🍚1/2 cup Cauliflower Rice
🌾 a pinch of Sesame Seeds
🧂 Salt and Pepper to taste

In a skillet on medium heat, brown your ground chicken. Add a pinch of salt and pepper. Once browned, add the bag of Asian style vegetables and broccoli florets. Add another pinch of salt and pepper, stir, cover and let simmer for about 5-10 minutes, or until all of the vegetables are thawed and cooked. Add 1/2 a bottle of no soy teriyaki sauce. Toss until thoroughly mixed. Top your cooked cauliflower rice (I also keep this frozen and on hand so that I can quickly steam some when I need it) with your ground chicken and veggie mixture. Garnish with sesame seeds and enjoy!

I meant for this to be silly, but then I got to thinking that maybe I should address balance. Because I often get comments from people at parties, events, gatherings, saying “I can’t believe you’re eating french fries” or “a burger” or “I’ve seen you eat a donut before 😱”. Is this my normal diet? Absolutely not. But I always find it crazy to think that people who live healthy lifestyles, should not be expected to ever indulge or enjoy treats. If an athlete takes a rest day, does that mean they’re not fit? I’m so proud of myself when I see how far I’ve come from avoiding gatherings and making memories with friends and family, because I was deep in disordered eating patterns, and was uncertain of the food being served. I can honestly say that now, after I finish a race, rather than seeing treat meals as something I had to earn, I see them as thanking my body for what it just did for me, by re-fueling and replenishing nutrients 🙌 I enjoyed dinners and ice cream with my sister and friends in Anaheim with zero food anxiety 👏 Stay balanced friends!

These baked protein oats are packed with protein and are my go to breakfast, every single day. I meal prep some version of these oats every week. I always eat them with Greek yogurt, for even more protein and top them with fresh or frozen berries. My favorite way to eat these Lemon Poppy Baked Protein Oats are with raspberries and strawberries. See my recipe for my Lemon Razzleberry Matazz! If you’re looking for a protein packed, dessert inspired breakfast, these are for you!
🍋 Lemon Poppy Baked Protein Oats 🍋
1 1/2 cups Sprouted Whole Grain Oats
2 scoops Vanilla Protein Powder
1 pinch of Redmond Real Salt
1 tbsp Poppy Seeds
1 tbsp Baking Powder
1/2 pkg No Sugar Added Lemon Jello Pudding
Mix or 3 tbsp Lemon Extract
1/4 cup Plant Milk
3-4 droppers Vanilla Liquid Stevia
1 tbsp Almond Extract
1 1/2 cups Riced Cauliflower (frozen)
1 cup Liquid Egg Whites

Preheat oven to 350 degrees. Combine all of your dry ingredients into a square brownie pan and mix well. Because of the amount of moisture in the recipe I never need to grease my pan. Add wet ingredients to dry ingredients and mix well. Add cauliflower rice and break up any chunks while you mix it. After all of the ingredients are mixed well, add the liquid egg whites and stir thoroughly. Bake for 35 minutes. Let it cool completely before you eat it. You don’t taste the cauliflower, it’s there for volume, but these oats definitely taste better the longer it’s allowed to set and cool out of the oven. Eat up!

Cowtown Half Marathon with my homie ! We talked about how this was such a nice switch up from our normal Hyrox training. I would say something super inspirational, about how we dug deep 👏 believed in ourselves 👏 conquered our doubts and fears 👏 but we did none of those things 😂 We talked, read/got power from (IYKYK✋)/laughed at all of the signs, high fived the spectators, and took in how beautiful our city is 🙌 Easy day. Loved running with you Heather! Let’s see if we can keep that chill vibe for Hyrox Houston.

Sometimes when I look back on my Hyrox races, I have a pinch me moment. Especially during the race, when I look around the course and see who I’m up against, but still running right along side of. I’m not a professional athlete, I don’t spend hours at the gym every day training and I’m definitely not in my 20’s anymore. I’m just a mom, who gets to race with some pros and is grateful that my body allows me to be there. If I ever get compared to other athlete’s times or fitness level, I remind myself of that. Especially when some athletes are in their 20’s, don’t have families and are able to spend hours training. So there really is no comparison. It’s like highlighting an apple to an orange, and telling it how it’s fallen short of being red and crunchy 😂 My doubles partner Heather is so good about reminding me, that we aren’t going to worry about what other people are doing. All we can control is ourselves and our own outcome! I’m so proud of where I’m at in my fitness, at this point in my life. Most of the hours in my day belong to my family and when my kids are grown up and moved out, future Lindsay will thank me for spending that time with them ❤️ If you’re one of the people who has ever told me that you were scared to sign up for a Hyrox race, because you don’t think you’re as in shape or will do as well as others, just remember to run your own race. Hyrox really is for EVERYONE, at any season in their life.

Yesterday we did the 31 mile Spartan Ultra (50k run+60 obstacles). It was an adventure. There were rocks, steep incline hills, walls and death traps, but the hardest part of the entire day, was right after our transition/halfway point, when I’d hit a little wall but it was time to start the course loop for a second time, and a lady who’d finished a shorter race, was sitting comfortably and offered me pizza. I thought for a split second about calling it a day and eating pizza ✌️😂 Jay & Jen were the best teammates to push myself with all day 🫶 So glad Jay asked us to check this one off of our bucket list with him! ✅

Side note: the 3 of us predominantly had That’s It fruit bars, RX bars and Relyte electrolytes as are race snack fuel and as far as being fueled, we felt amazing! It makes a huge difference when you don’t eat garbage!
