Today we work with clients all over the nation continuing to expand upon this passion. Save this one for an easy meal prepped lunch or fast dinner!

Black Bean and Chicken Quesadilla
Ingredients:
- 2 tortillas, whole wheat
- 1/4 black beans, canned, no salt added, drained and rinsed
- 3 Tbsp mozzarella cheese, shredded, low-fat
- olive oil cooking spray
- 1/4 cup onion, chopped
- 1/4 cup bell peppered, chopped
- 3 oz chicken breast, boneless, diced (season however you prefer with cumin, garlic powder, onion powder, salt, etc)

Directions:
1. Brown chicken and sauté green pepper and onion in olive oil on medium heat
2. Remove onion and pepper form pan
3. Lay one tortilla in the pan
4. Spread the cheese over the entire surface of the tortilla
5. Add the remaining ingredients over the cheese
6. Fold or Leave flat and heat on medium heat until the cheese is melted

Makes 1 serving
~450 calories, 35g protein, 61g carbohydrates, 10g fat

For those of you that have been following us for a while, you know one Eve’s hobbies includes collecting Hard Rock shot glasses. But she must physically go to each location herself. Foxwoods, CT is #94 and is the second to last one in the U.S. (unless a new one goes up of course).

Eve Pearson, MBA, RDN started Nutriworks, Inc. in 2004 based on her belief that if you’re active, you’re an athlete! Eve has been a lifelong athlete competing in youth gymnastics, collegiate cheer, and endurance and ultra-endurance triathlon, running, and mountain biking as an adult. She’s qualified for Boston Marathon twice, finished Ironman and completed 100- mile mountain bike and running events. She’s also an avid hiker and loves anything outdoors. Eve is an adjunct professor at Texas Christian University and serves as a mentor to many students aspiring to become Sports Dietitians. Eve sees clients out of our Ft. Worth office, does most of our speaking events and serves as a consultant to many organizations.

Before planning your meals, look for the busy spots in your week:
• Late meetings
• Long training sessions
• Travel
• Eating at work
• Dinner out
• Family obligations

Now, decide ahead of time what you’ll do in those situations. You need a plan that you can follow consistently, not just one that looks good on paper! 👉🏽

PSA: if you want your nutrition plan to work, it needs to fit the stage of life you’re in.

If you’re training hard AND working 40+ hours a week (not to mention raising kids and/or trying to have a social life), you can’t expect your best nutrition plan to involve cooking extravagant recipes from scratch every night.

If you don’t have the time to make that happen, there’s a disconnect between what you think you SHOULD be eating and what you CAN REALISTICALLY PULL OFF.

That’s exactly where Emma was! Before working with Nutriworks, she felt like she never had time for breakfast or snacks on workdays, but Maria helped her create a menu with easy, healthy options that didn’t require a ton of prep. This allowed her to fuel her busy, active lifestyle without spending hours in the kitchen.

As a result, Emma went from a 3:16:33 marathon to 3:04:26 while becoming leaner, fueling with more carbs, and correcting her iron deficiency anemia.

As sports dietitians, we see this all the time: athletes who are incredibly intentional about their training but leave their nutrition up to whatever happens that day!

Don't let this be you!

Try this before your next training week:
- Look at your training schedule.
- Identify your busiest days.
- Note your harder/longer workouts.
- Think through which meals and snacks you'll need on the go.
- Make sure you have the food available to execute the plan.

Do you know when you’re LEAST likely to make a good nutrition decision?

When you’re hungry, tired, rushing home from work, or heading straight to a workout.

So let’s get ahead of it!

Try this tonight: Decide what you’re eating for your meals and snacks tomorrow. It doesn’t need to be elaborate or “perfect.” You just need a plan to make it easier to follow through without relying on willpower.

And if you want to make this even easier, start building a Master Menu: a list of your go-to meals organized by things like prep time, so you always have realistic options to plug into your weekly menu!
