Basil roots in 5–7 days in a jar of water on a windowsill. Most people don't start there β€” but once you see it work, the rest of this list makes immediate sense. 🌿

Eight herbs that grow indefinitely in water, no soil required. All you need is a cutting with a node, a glass jar, and bright indirect light:

- Basil: fastest to root β€” dense white roots in 5–7 days. Change water every 3–4 days or it clouds up fast
- Mint: just as easy β€” any stem cutting roots in a few days. Keep it in its own jar; it dominates everything near it
- Green onions: place the root base in 1 inch of water. Full regrowth in about 10 days. Cut and regrow multiple times from the same bulb
- Oregano: roots in 1–2 weeks. Needs the most light of this group to grow well
- Thyme: slower to root (2–3 weeks) but grows compact and productive once established
- Rosemary: the slowest β€” 3–4 weeks for first roots. Worth the wait; it becomes the most robust jar on the windowsill
- Flat-leaf parsley: 2-inch stems in shallow water, new leaves in about two weeks
- Lemon balm: grows exactly like mint, same method β€” lighter citrus scent, slightly less aggressive β˜€οΈ

Four things that actually matter: change the water every 3–4 days, use bright indirect light not direct sun, harvest often (herbs produce more when cut regularly), and watch the roots β€” it's genuinely satisfying. πŸͺ΄
