Try this nourishing breakfast packed with protein, healthy fats, and colorful veggies to fuel your morning the right way! 🥑 🍳

Ingredients:
• 2 large eggs
• 1 slice of bread
• 1 cup fresh mushrooms, sliced
• 1 cup spinach leaves
• 1 ripe avocado, sliced
• 1–2 medium tomatoes, halved
• 1 tbsp olive oil
• Salt & black pepper, to taste
• Fresh parsley, chopped
• Optional: chili flakes, lemon wedge

Directions:
- Sauté mushrooms in ½ tbsp olive oil until golden (6–8 min). Set aside.
- In same pan, wilt spinach for 1–2 min. Remove.
- Sear tomatoes cut-side down until caramelized (3–4 min).
- Toast bread until golden.
- Fry eggs to your preference.
- Assemble with toast, mushrooms, eggs, spinach, tomatoes, and avocado. Garnish and serve!
