Now is a great time for getting more local veggies. Here is one way to do that: Breakfast Garden Omelette - ingredients = 6 eggs, 1 medium red potato, 1 red sweet pepper, spring onions (1 or 2), tomato, medium or 6 cherry tomatoes.
Place 1/4 cup olive oil in frying pan to heat on low medium.
Microwave the potato 4 minutes, then slice thinly, along with sliced peppers and onions. Saute' until potatoes begin to brown. Add sliced tomato, then eggs. Eggs can be whisked prior to adding. Cook until eggs get solid, then flip to finish cooking. Add shredded cheese if desired and salt/pepper to taste. This serves 2. You can refrigerate and reheat in the microwave. Vitamin D can be found in egg yolks, salmon and other foods, but people in the north US may be more likely to have vitamin D deficiencies because we get this vitamin from the sun as well as some foods.
