The sun and the outdoors are the best medicine. Missing the beaches and trails in quarantine but very thankful to still be able to enjoy the sun on my face. Studying for my test coming up this week. I’ll be half way done with my health and nutrition certification!!

I experiment with two new foods again lastnight: turnips and orca beans! Will definitely keep both in my cooling rotation moving forwaed ☺️ I got the Orca Beans from a farm in Minnesota (they have the best wild rice grown in that region too!) ⠀

Beans can be a controversial health food. This is in part due to the fact that they contain lectins which are hard on the body and can cause damage to digestive tract and activate the immune response. Particularly problematic for those with Celiac. ⠀

Soaking beans overnight and boiling will remove lectins leaving a very flavorful, nutrient, and protein packed bean! Beans that are packaged in rice pilaf or some brands of hummus may be an issue. We should be avoiding processed foods for a laundry list of reasons anyway ☺️⠀

I made radishes AND aioli for the firsr time, and I must say, I’ll definitely be cooking with both in the future🤍 This mediterranean inspired dish is rich in a variety of vegetables with complete protein packed quinoa! My roommates and I do family dinner most nights which has been one of our favorite parts of quarantine! Both my roommates eat meat and dont limit their animal protein so tonight I also made a ground turkey to add to their dishes! A super easy way to make a meal that suites everyone’s dietary needs and preferences but still get to eat together! ⠀
