A few weeks ago, I stepped outside my comfort zone and joined a new gym.

Not going to lie, I was a little intimidated! 😂

But I joined with a couple of friends, and that made taking the first step so much easier.

And you know what? I’m actually loving it!

A little reminder that it’s never too late to try something new. And sometimes the best thing you can do for yourself is find someone willing to try it with you. 💚

What’s something you’ve tried recently that pushed you outside your comfort zone?

🥔🌱 You asked for the recipe!

Here’s the funny thing… I didn’t actually use one! 😂

This creamy Potato Leek & White Bean Soup came together with a few simple ingredients and a little improvising.

Here’s how I made it:

🧅 Sauté chopped shallots and leeks in a splash of vegetable broth until softened.

🧄 Add minced garlic and cook another minute.

🥔 Add diced potatoes, one can of drained and rinsed white beans, and enough vegetable broth to cover everything.

🌿 Season with thyme, salt, pepper, and a pinch of crushed red pepper flakes.

🥣 Simmer until the potatoes are tender, then use an immersion blender to partially blend the soup, leaving some chunks for texture.

🍋 Finish with a squeeze of fresh lemon juice to brighten everything up!

That’s it! Creamy, comforting, and full of plant-based goodness. No cream or oil needed!

One of my favorite ways to start the day! 🌱🥣

Steel-cut oats are already a great source of fiber, but I love finding simple ways to make an everyday breakfast even more nutritious.

Here’s what went into my bowl this morning:

🌾 Steel-cut oats – Whole grains and soluble fiber to support heart health.

💛 Turmeric + a pinch of black pepper – Turmeric contains curcumin, a compound with antioxidant properties. Black pepper contains piperine, which can help increase curcumin absorption.

🤎 Cinnamon – Adds natural sweetness and flavor without added sugar.

🌱 H**p seeds – A little boost of plant-based protein and healthy fats.

🍓 Strawberries – Fiber, vitamin C, and antioxidants.

🌰 Walnuts – Healthy fats, including plant-based omega-3s.

Nothing complicated. Just a few simple additions to make an already healthy breakfast even better!

This is something I emphasize in health coaching: healthy eating doesn’t have to be an all-or-nothing approach. Small, consistent choices matter.

Not every workout needs to feel like a workout! 🌊🐾

Sometimes it’s just a walk on the beach, some fresh air, and a four-legged friend who makes sure you keep moving. ❤️

One of the things I encourage in health coaching is finding movement you actually enjoy. Because when something feels good and fits into your life, you’re much more likely to keep doing it.

Walking counts. It all adds up! 🌱

🌱 Sometimes eating healthier is as simple as adding one ingredient!

Last night, I was heating up leftover soup and decided to throw in a handful of spinach.

Nothing fancy. No new recipe. Just an easy way to add more greens to my day!

We often think eating healthier means making big changes, but sometimes it’s the little things we do consistently that make the biggest difference.

That’s exactly the approach I take with my coaching clients—finding simple, realistic ways to build healthier habits that fit into everyday life.

💚 What’s your favorite easy way to add more plants to a meal?

Feeling a little puffy this morning? 🙋‍♀️

That was me today, so I’m starting my day with plenty of water and this easy plant-powered smoothie.

🥛 Soy milk
🍍 Frozen pineapple
🫐 Frozen berries
🌱 Leafy greens
🥜 Peanut powder
🥄 Ground flax or chia
🍁 A little maple syrup
🌿 Amla powder
🥄 Psyllium husk

It’s hydrating, and the fruit and greens provide potassium — which plays an important role in fluid balance. Plus, the soy milk, peanut powder, seeds and psyllium help make this a fiber-rich, satisfying breakfast.

I also add a little amla — Indian gooseberry — for an extra boost of plant compounds and antioxidants.

No magic “detox” required. Just nourishing foods, plenty of water and getting on with my day. 🌱

Healthy habits don’t have to be complicated to make a difference.
