A Cape Cod, MA-based Registered Dietitian, author and local food enthusiast, Nicole is dedicated to inspiring her clients and community to manage their energy and life in a way that creates positive relationships with food and supports long-term wellness. Nicole earned her Bachelor’s of Science degree in Human Nutrition from the University of Massachusetts and completed her post-graduate training
at Beth Israel Deaconess Medical Center, a Harvard Medical School teaching affiliate. Through her nutrition counseling company, Delicious Living Nutrition, Inc., Nicole works with individuals and families on individualized nutrition plans to create better overall health. She specializes in gastrointestinal issues, food allergies/intolerances, heart disease, diabetes and prevention. She also co-founded The Local Juice, Cape Cod’s first cold-pressed juice company that uses produce purchased from farms within a 100-mile radius, grown using organic practices whenever possible. Most recently, she has partnered her Farm Fare Market, a purveyor of locally grown, organic and environmentally friendly items, with The Local Juice Bar that is expected to open by 2016. Each season, Nicole introduces more and more people to the joy of creating delicious, nutritionally complete meals with locally sourced foods through the market’s popular CSA program. She is the author of The Everything Guide to Nutrition, The $5 A Meal Vegetarian Collage Cookbook and 201 Organic Smoothies & Juices for a Healthy Pregnancy, and co-author of The Everything Juicing Book.
