Looking for a savory, protein-rich option that's gentle and satisfying? These baked egg & veggie cups are a bariatric-friendly favorite and easy to prep.

Steps: Preheat the oven to 375°F. Whisk the eggs and stir in the spinach, bell pepper, tomato, and cheese. Season lightly. Pour into a greased muffin tin (about ⅔ full each). Bake for 18–20 minutes, until set. Cool slightly and enjoy, or refrigerate for grab-and-go mornings!
