🎓✨ Officially earned my Master of Science in Nutrition & Dietetics from the University of North Florida, Brooks College of Health.✨🎓

This journey challenged, inspired, and transformed me in so many ways. From late nights studying metabolism and medical nutrition therapy to balancing internships, teaching, research, family, running and life, every moment led to this milestone.

Grateful for every professor, mentor, classmate, colleague, friend, and family member (&dogs) who supported me along the way. This degree represents not only academic achievement, but a deeper commitment to helping others nourish their health through compassion, evidence-based nutrition education, and meaningful communication.

Next stop: RD exam. 💚🥦📚

Honored to see our first ever Nutrition & Communication course featured by the 💚🧡💚

This class challenges students to go beyond food labels, thinking critically about nutrition information and understanding how food and health messages are communicated.

In a world full of nutrition claims, building nutrition literacy and communication skills has never been more important.

So proud of these students and grateful to the School of Communication for supporting interdisciplinary learning.

How do you keep fueling when life is busy?

For me, it starts with what’s on my plate.

My end of semester reality: Grading papers, listening to presentations, finishing my own graduate program requirements, managing family life, and still trying to keep exercise in the mix.

The only way I can sustain this pace is by fueling my body with nutrient-dense foods that support energy, focus, and recovery.

When your schedule is demanding, what you eat truly matters.

Food isn’t just about calories, it is also about giving your body the nutrients it needs to think clearly, stay energized, and keep showing up for the many roles you hold.

These are a few of the meals that have been keeping me fueled during this very full season.

Great conversations happen when science meets communication.

A big thank you to .dankhay for visiting my Nutrition & Communication class at the University of Miami

Dr. Dan shared valuable insights on metabolic health, nutrition messaging, and how to simplify complex health information for the public. My students really enjoyed the discussion and the opportunity to learn from someone who is actively communicating evidence-based nutrition and health information to a broad audience.

YELLOW Watermelon???

It wasn’t until I came home and cut my watermelon that I realized it wasn’t red! I actually thought it wasn’t ripe. Thanks to google I learned that there is such a thing as a yellow watermelon! (I didn’t notice the sticker when I purchased it at my local Sprouts).

It actually has many nutritional benefits:
-vitamins A & C
-beta-carotene
-citrulline
-super hydrating

The yellow watermelon was actually DELICIOUS! Heartier and a bit less sweet than it’s red counterpart, it was perfect for my summer salad!

-feta cheese
-cucumbers
-arugula
-spinach
-blackberries

☀️ Summer Solstice 2024 has arrived! ☀️
Here in Florida it’s always summer but in many parts of the country today is the kickoff of the first day of summer.

One of the reasons I’m committed to working out year round is because everyday is a potential beach day here in sunny Florida. However, the years I lived up north, I was also committed to eating healthy and working out 12 months a year. So remember if you’re starting a summer workout routine now, try to maintain it even when sweater season kicks in.
If you’re committed to light and healthy eating during the summer try to maintain it once the holidays around.
Also try to follow the 80/20 rule with working out and eating healthy. It’s OK to give yourself a break 20% of the time but establishing a routine and consistency is optimal for long term results.
