Meals Under $50 — Part 3: Salmon Risotto
This week we’re putting together a delicious, restaurant-style Salmon Risotto while keeping the total ingredient cost under $50. This recipe combines creamy Arborio rice, wild-caught salmon, tangy goat cheese, and rich chicken bone broth for a comforting meal that’s packed with flavor.
SALMON RISOTTO
Ingredients:
• 1 package Azure wild-caught salmon
• 1 package Arborio rice
• Bella Capra goat cheese
• Twisted V chicken bone broth
• Butter or olive oil
• Salt and pepper
• Garlic and your favorite herbs, to taste
Directions:
Season the salmon with salt, pepper, garlic, and herbs.
Sear or bake the salmon until cooked through, then set aside.
In a saucepan, toast the Arborio rice in a little butter or olive oil.
Slowly add warm chicken bone broth, one ladle at a time, stirring frequently and allowing the rice to absorb the broth before adding more.
Continue until the rice is creamy and tender.
Stir in goat cheese for extra creaminess and flavor.
Flake the salmon and gently fold it into the risotto, or serve it on top.
Finish with additional goat cheese, herbs, and black pepper.
