Now that the kids are home for summer break, try one of our kid-friendly recipes from our Build a Healthy Meal series like the Sushi Stack. The selection of rice is important for this recipe, any short- or medium-grain rice will do. This meal is fun to make with kids and can be served with cucumber salad and a side of pears to make this a balanced meal.
Ingredients:
1 cup medium-grain white rice, cooked
1 pound fresh shrimp, peeled, deveined and rinsed
½ teaspoon onion powder
½ teaspoon garlic powder
1 ½ teaspoon no salt Creole seasoning
2 tablespoon of olive oil
1 cup cucumber, diced
1 cup carrots, shredded
4 teaspoon Kung Pao sauce, 1 teaspoon per stack
Spicy Mayo
4 teaspoons
1 teaspoon sriracha sauce
Low sodium soy sauce (optional)
Sesame seeds (optional)
Avocado (optional)
Instructions:
1. Cook rice according to package directions
2. When the rice is cooked, evenly spread it on a pan to cool.
3. In a medium bowl, toss the shrimp with onion powder, garlic powder and no-salt Creole seasoning.
