It used to be my favorite dessert, too. But since I've recently been working with a brilliant cardiologist, Dr William Davis, author of SuperGut, I've learned that wheat, grains and sugars are the cause of chronic illness, and any bloodsugar over 100 is causing glycation and serious health consequences. So, I'm still vegan, but have totally eliminated wheat, grains ( including rice and corn) and all sugar, but still eating some low sugar fruit, like berries. Those things also cause depression and mental health issues. Since despite my vegan diet, I still have a high coronary calcium score, with genetically two parents who had open heart surgery, I'm taking his advice seriously. He says anyone who has ever had an antibiotic has SIBO (small intestinal bacterial overgrowth), so it's critical to restore the missing bacteria. I was having a craving for banana muffins the other day. In this recipe, I substituted bananas for the sweet potatoes, but they are yummy either way. And if you use silicone baking pans, you dont need to add any oil or paper cupcake holders :) I doubled the recipe and put them in gallon size baggies for my husband and I to enjoy all week :)

Wow wow wow, what an amazing event on Long Covid and Vaccine Injuries last night. The science was so solid by these caring doctors. It's so sad how Dr. Cole and Dr. Kory have been maligned and falsely accused on Wikidedia and Social Media. But still they risk everything to present the science and help people.

Anyway, the event went til 11 pm and had a full house of people with open minds and eager to learn.

I want to thank my professional photographer friend, Glen Dohie for sharing the pics. A few were from my phone. Of course you can tell which are which lol.

I think all of us are never without our cell phones or computers.
