Steel-Cut Oats Fufu: A Healthy, Fiber-Rich Swallow*
Using steel-cut whole-grain oats for fufu is an excellent choice! It’s a healthy, fiber-rich alternative to traditional starchy swallows like cassava (garri) or yam.
Why it works so well:*
High nutrition & great texture*: Steel-cut oats are a whole food packed with protein, fiber, and iron. They help with weight management by keeping you full longer.
- *Heart-healthy*: The soluble fiber, beta-glucan, helps lower cholesterol.
Lower glycemic index*: Less processed than instant oats, so they’re better for blood sugar control.
How I make it:*
Because steel-cut oats are chopped, not rolled, prep is key for a smooth, stretchy fufu:
1. *Blend thoroughly*: I measure 2 cups of dry steel-cut oats with 1 cup of water and blend until completely smooth and liquid.
2. *Cook it*: Pour the mixture into a pot and cook on the stove, stirring continuously until it thickens and pulls together like fufu. *If it gets too thick while cooking, keep adding small amounts of hot water and stir until it’s smooth and well cooked.*
You _must_ blend the dry oats into a fine flour or smooth liquid first. Otherwise you’ll end up with a grainy texture.
