A couple of thoughts on this:
•In my “real job,” I work in special events primarily in the Midwest and see the event details now and again. Lately the number of guests at catered functions requesting a gluten-free meal ranges from
4-6%. That’s significant.
•There is an increasing number of medical conditions where the benefit of a gluten-free diet is apparent. Many autoimmune conditions, many skin conditions, it’s more than celiac and wheat allergy. Food labeling matters more than ever.

WHY DO YOU EAT GLUTEN FREE?
A recent report on the gluten free food industry stated that "While approximately 1 in 133 Americans carries a celiac disease diagnosis and an estimated 83% of those individuals remain undiagnosed (Celiac Disease Foundation), a much broader population is driving category growth.

Approximately 23% of U.S. consumers now actively purchase gluten-free products, with the majority doing so for lifestyle and wellness reasons.'

Here I am again, being reminded of the recipes on my own site by my friend Shirley at gfe--gluten free easily. 😂 These muffins are such an easy way to get a donut-like flavor without making donuts. Plus muffins, who doesn’t like a muffin?

P.S. Super grateful when my recipes are shared. Even though I don’t have a lot of time for recipe development and celiac advocacy these days, my site keeps ticking along because of your shares and visits. ❤️

“Which grocery store has the best gluten-free section?”

Unpopular opinion: most grocery stores have an enormous gluten-free section, it’s just confusingly labeled PRODUCE.

Breakfast this morning was a high-protein yogurt and a bit of fruit. While eating breakfast, I roasted a sheet pan of vegetables to be used multiple ways. All naturally gluten-free foods, none in a special/expensive department of the store.

This cobbler recipe needs only one more thing: a scoop of vanilla ice cream. You know what I’m talking about, right? Impatiently waiting until it has cooled just enough to scoop it into a bowl and then put a scoop of ice cream right on top so it’s starts melting over the cobbler. Sooooo good.

Thank you to my congressman, Emanuel Cleaver II and Congresswoman Betty McCollum for doing this important work. Let’s all get busy contacting our reps and ask for their support of the Celiac Safety Act.

(Washington, D.C.) – Today, during Celiac Disease Awareness Month, U.S. Representatives Emanuel Cleaver, II (D-MO) and Betty McCollum (D-MN) introduced the Celiac Safety Act to strengthen food labeling law and protect the roughly 3 million Americans with Celiac Disease.

Current favorite salad: air fried halloumi, strawberries, dates, cherry tomatoes, red onions and almonds over spring greens with poppyseed dressing.

Air frying halloumi is a breeze. Cubed or sliced, about 8-9 minutes at 400°. Single layer with little touching.
