It’s good to see forward motion to help those with gluten-related medical conditions eat safely, especially during Celiac Disease Awareness Month!

Thank you to my congressman, Emanuel Cleaver II and Congresswoman Betty McCollum for doing this important work. Let’s all get busy contacting our reps and ask for their support of the Celiac Safety Act.

(Washington, D.C.) – Today, during Celiac Disease Awareness Month, U.S. Representatives Emanuel Cleaver, II (D-MO) and Betty McCollum (D-MN) introduced the Celiac Safety Act to strengthen food labeling law and protect the roughly 3 million Americans with Celiac Disease.

Current favorite salad: air fried halloumi, strawberries, dates, cherry tomatoes, red onions and almonds over spring greens with poppyseed dressing.

Air frying halloumi is a breeze. Cubed or sliced, about 8-9 minutes at 400°. Single layer with little touching.

In spreading awareness for a chronic autoimmune disease with no cure and the only treatment being eating gluten-free, it’s easy to be fixated on food. With companies using this month to promote their gluten-free products, it’s easy to get sucked in and want to buy all of it. This part of celiac disease and other gluten-related medical conditions is hard and not talked about enough.
