A Day's Food I am a mom, public school educator and Cornell University certified plant-based nutritionist. Inflation has caused us to rethink our daily food regimen.

Given how busy our lives are, it can be difficult to find the time to shop, cook and eat healthy. The goal here is to offer nutrition coaching and recipes that focus on healthy immune function while adhering to a budget. I want to help you provide meals that will nourish your family and not break the bank! We're in this together!

Happy rainy, spring Sunday! In an attempt to rejuvenate this project and page, I am considering offering meal preparation ideas... and not just ANY meal prep ideas, ideas using ingredients you might have ON HAND. The focus? Budget friendly eating, while keeping things fresh and unprocessed. What does everyone think? Send me YOUR ideas and needs and I'll work my magic.
