We still offer keto-friendly meals, and for some people keto genuinely works well. But over time, our philosophy around nutrition has evolved a little.

What we’ve learned is that balance matters.

Focusing on cleaner ingredients and healthier fat sources. And while we still try to accommodate customers following keto diets, we’ve started putting more emphasis on meals that feel more balanced overall.

Complex carbs. Fiber. Real proteins. Healthy fats. Lower sugar. Just wholesome food that feels sustainable long term.

At the end of the day, we are less interested in chasing diet trends and more interested in helping people build meals they can realistically enjoy and stick with.

That’s the direction we’re continuing to move toward as we grow and develop new menu items.

What if we spent decades being told the wrong thing about fat?

For a long time, people were taught that all fat was bad. Low-fat everything became the standard, and a lot of us grew up believing that fats were something to avoid completely.
But as more research has come out, the conversation has changed a lot.

Healthy fats can actually be incredibly beneficial. Things like avocado, olive oil, bone broth, and other clean fats help with brain function, energy, and keeping you full longer. The key is understanding the difference between good fats and heavily processed oils.

That’s something we think about constantly in our kitchen.

When customers see a meal with a little more fat in it, sometimes there’s immediate hesitation. But we try to explain that not all fats are equal. We focus on cleaner ingredients and better fat sources because we want meals that are satisfying, balanced, and made with intention.

At the end of the day, we just want people to feel informed about what they’re eating instead of automatically fearing certain ingredients because of outdated advice.

What happens when you throw filet mignon, street corn flavors, creamy cilantro sauce, and a late-night brainstorming session into one bowl?

Apparently… one of our biggest hits on the menu.

When Marcos and I brought this Tex-Mex bowl home after work, it was actually the first time we had tried everything together exactly as the customer would get it. And honestly… it instantly made sense.

It has a lot going on, but every ingredient has a purpose. Cilantro lime rice, roasted corn, cotija cheese, grilled filet mignon, sautéed jalapeños, creamy cilantro sauce, fresh lime, cilantro on top. It sounds like a lot, but it all balances perfectly.

The funny part is that the original concept started from a late-night brainstorming conversation with ChatGPT while I was trying to figure out what our new menu was missing. Not the recipe itself, but the overall idea and direction.

From there, Marcos and the kitchen team brought it to life.
And now it’s become one of the stronger dishes on the menu.
It’s filling, fresh, flavorful, and just different enough from everything else we offer.

We want to be as transparent as possible about this.
When you select a delivery time, it is not a guaranteed, exact time. It is a window. The reason for that is how our delivery routes are structured.

We have multiple drivers covering different areas, and each route is grouped by location. That way we can deliver efficiently without sending drivers back and forth across the city. It allows us to serve more people while still keeping everything organized.

Most of the time, everything runs smoothly within those windows. But if you are not going to be home during your delivery time, we do have a few options.

We can leave your meals in an ice chest if you have one set out, and we can provide ice packs to help keep everything cold. That tends to work really well for customers who may be out for a short period of time.

If that is not an option, we will always communicate with you and help find the best solution. In some cases, we may suggest switching to pickup and will remove the delivery fee.

We are always trying to make it work while still keeping the system running efficiently for everyone.

There’s a reason we pay attention to colors.

When we build a plate, it’s not just about flavor. It’s about how everything comes together visually. The verde enchiladas are a good example. You have a green sauce over cilantro lime rice, which is also green. It tastes great, but it can feel a little flat visually.

So we balance it.

We add black beans and corn for contrast and a little extra fiber, but also because it brings the dish to life. Then we finish it with diced tomatoes on top, which complements the green and gives it that final touch.

It’s a small detail, but it makes a difference.

We want every meal to feel complete. Not just something that tastes good, but something that looks good when you open it, too.
That’s part of the experience we’re trying to create.
