We love providing our chef friends with the freshest ingredients possible!

📍At Dancing Bear Appalachian Bistro, we take pride in sourcing ingredients from local farmers and purveyors to create dishes that showcase the rich flavors of the region. 🌱 We believe that by supporting local agriculture, we can not only offer our guests the freshest and most flavorful ingredients but also help sustain the community around us.

🔪 As part of our commitment to sourcing locally, our Executive Chef Jeff Carter often makes impromptu purchases from local farmers when they have overstock or something interesting to share with us. This allows us to not only support small-scale agriculture but also offer unique and unexpected dishes to our guests. 📦 This week, we had a surprise delivery from Salubrious Farms. . .

Salubrious Farms brought us an 8lb Chicken of the Woods 🍄 mushroom harvested on their farm. This impressive mushroom is known for its meaty texture and rich, savory flavor, making it a favorite among chefs and foodies alike. Joshua Lowans of Salubrious Farms shared his excitement about finding the mushroom, stating, "This mushroom is one of my favorites to forage. Chicken of the woods (Laetiporus cinncinatus) pops it’s head out in the Spring to the early Fall. 🪵 This one was located on the roots of a mighty oak tree on the edge of the woods."
