the most expensive grocery store inspired sweet potato + hot honey chicken burger bowls 🍠

crispy japanese sweet potatoes:

• japanese sweet potatoes
• avocado oil
• sea salt
• poke holes all over, coat in avocado oil
• bake at 425° for 20 min
• take out, slice in half, drizzle more oil + sea salt
• place flesh side down, back in oven until golden & crispy

hot honey chicken burgers:

• 1 lb ground chicken
• sea salt
• fresh dill
• garlic
• mix together, form into patties
• sear in avocado oil ~6 min each side
• drizzle hot honey on top

bowl: bed of arugula + cottage cheese + crispy sweet potato + chicken burger

~40g protein. inspired by Erewhon’s famous japanese sweet potatoes but made into an actual meal.

Congee Recipe 🍚

MY TCM DOC IS .debbie.kung :) she’s based in Austin!

here’s how I make it:

Ingredients:

* ½ cup sweet short-grain white rice
* 4 cups bone broth
* 1 cup water
* 1 k**b ginger, sliced
* 5 jujubes (red dates)
* Sea salt

For the jammy eggs:

* Eggs
* Coconut aminos or soy sauce

Instructions:

1. Soak the rice while you prep everything else.
2. Add rice, bone broth, water, ginger, and jujubes to a pot.
3. Bring to a boil, then reduce to a low simmer.
4. Simmer for about 2 hours, stirring occasionally until the rice breaks down into a creamy porridge.
5. Season with sea salt.

Jammy Eggs:

1. Bring a pot of water to a boil.
2. Carefully add eggs and set a timer for 6 minutes.
3. Transfer immediately to an ice bath.
4. Peel and soak overnight in coconut aminos or soy sauce.

To Serve:

* Reheat the congee.
* Top with 2 jammy eggs.
* Add a handful of goji berries.
* Finish with a little extra coconut aminos if desired.

That’s it. Just sea salt and coconut aminos.

In Traditional Chinese Medicine, congee is often used because it’s warm, easy to digest, nourishing to the digestive system, and supportive during periods of recovery, bloating, low appetite, or when you’re trying to give your gut a break.

lamb hamburgers (place into little meatballs, and fry in avocado oil and smash them to patties)

cucumber salad with tomato, crumbled goat cheese and Kalamata olives. champagne dressing!!

SIMPLE SOUP RECIPE

bone broth
chuck roast
zucchini

for the chuck roast I cut into cubes, browned each side on stovetop and then cooked in bone broth in a Dutch oven (cover the meat in bone broth) at 275 for 4 hours. You will know when it’s done when it’s fork tender and pull apart.

zucchini go in the oven at 425 with avocado oil and se salt until crispy

once chuck roast is done, add another carton of bone broth + zucchini and se salt and that’s it!
