✨Roasted sweet potatoes, cut sweet potatoes into cubes. Toss with olive oil, salt & pepper. Cook at 425 degrees for 25-30 minutes 🍠

First triathlon back in eight years!! 🙌🏻 Old PR 3:03:04 NEW PR 2:52:08 😮

Had a blast today!!! Ended up coming in 1st in my age group (only 2 people in my age group but I’ll take it) and 4th overall female 🏊🏻‍♀️🚴‍♀️🏃‍♀️

The kids had a blast handing out high fives to the racers and meeting me at the finish line! 👋🏻

Thanks for putting in a great race Wolfpack Multisport 👊🏻 Hope to see you next year!

Small meal prep for this week because it was a busy morning with the triathlon. Rotisserie chicken is always my go to protein when I’m short on time. Rice, steam-able potatoes or Mac & cheese are my go to carbs. Frozen veggies or roasted veggies are my go to veggies 👌🏻

Lunches this week…
✨Rotisserie chicken 🐓
✨Jasmine rice 🍚
✨Roasted broccoli and carrots. Preheat oven to 425. Ross carrots with olive oil, salt and pepper. Cook for 20-25 minutes. Toss broccoli with olive oil, salt and peppers. Remove the carrots from the oven. Add the broccoli and cook for an additional 15-18 minutes 🥦🥕
✨Optional, top with your favorite sauce. My favorite mix is Buffalo sauce with blue cheese dressing 😮

We leave for Massachusetts Friday morning for Western Mass 70.3 🏊🏻‍♀️🚴‍♀️🏃‍♀️ IRONMAN so not too many meals needed. I also bought some things for the road trip. Peanut butter pretzels, chicken sticks and bananas. Will share more of our road trip food later in the week! 🚗

1. Rotisserie Chicken, Jasmine Rice with Roasted Veggies (Broccoli & Carrots) 🥦🥕
2. Steak, Gnocchi with Pesto and Asparagus 🥩
3. Pork Loin, Mac & Cheese with Roasted Brussels 🐖
4. Salmon, Seasoned Potatoes with Roasted Green Beans 🍣
5. Leftover Pork Loin, Roasted Sweet Potatoes with Salad Kit 🐖🍠

Breakfast - Protein Smoothie (unsweetened almond milk and frozen mixed berries) with oatmeal and 🥣

Snacks:
1. ALOHA bar 🍫
2. Greek Yogurt with , berries and Granola 🥣
3. Cheese sticks & Apple 🍎🧀

Produce – apples, broccoli, carrots, salad kit, green beans, potatoes, sweet potatoes, asparagus, berries and Brussels 🫐🍓

Dairy/fridge - unsweetened almond milk, plain Greek yogurt, and cheese sticks 🧀

Dry/canned - gnocchi, Mac & cheese, granola, pesto, jasmine rice, oatmeal, , and Diet Coke 🥤

Protein - rotisserie chicken, pork loin, steak, and salmon 🍣

Frozen - berries 🫐🍓

Staples in your house you’ll need or items from recent hauls you should still have protein power, olive oil, and spices👊🏻

Another meal idea with left over Slow Cooker Pork Carnitas ⬇️

Ingredients:
✨Left over slow cooker pork carnitas from tacos the other night. I posted the recipe about 3 weeks ago! 🐖
✨ protein plus pasta 🍝
✨Roasted corn, so good! Sauté corn kernels with olive oil, salt and pepper until charred 🌽
✨Romaine lettuce 🥬

✨6 pregnancies, 2 living kids 🤰🏻
✨Survived a 6 month deployment 🇺🇸✈️
